This one is very similar to Cantillon’s geuze, strangely enough. Very dry, not as sour as geuze, but I could have this with brunch and it would be perfect. The chocolate has a phantom presence; it’s really only hinted at, with no overt flavors coming through. I didn’t really notice the chili, either. But who cares? If the beer tastes this good, I don’t care what the label says it should taste like!
Update 12/6/07: Had a bottle at Spuyten Duyvil... insanely chocolatey bottle! No phanton presence in this one... one of the best beers I’ve ever had. More sour than before, and I think I detected the chili this time. Pour hazy amber with a tightly bubbled white head. As the head faded, it left behind big clumps of lace.
Hmmm. No signs of cocoa powder in the nose. Hell, there’s barely any sign of chili powder. I mostly get an appley nose, with some dusty yeast.
The chili powder flavor is there. I can feel it no my tongue well after I swallow. Again, some apple. That must be common with Fantome beers. The malt flavor is grainy. I’m digging the chili powder. Where in the hell is the cocoa?
Medium body. Lots of carbonation. Extra dry finish. Not thrilling.
I was really looking for something with a little, I don’t know, CHOCOLATE! arjoseph (594), Chicago, Illinois, USA Oct 9, 2007 75 cl bottle into tumbler; purchased somewhere in Wisconsin. Hazy orange beer that looks moderately fizzy with a fully diminishing head. Smells like a yeasty peeled orange with some peaches and cream malt character, too. After the first sip, I’m forced to ask everyone at the table if they can taste any chocolate in it; everyone goes down for another try, and the general consensus is "maybe." Crisp at front with acidity, the chili pepper is very pronounced and nice in the finish (along with some black pepper and cloves). This has enough sourness in the middle and front to convince me it is actually a lambic and not a saison. A soft sweetness starts after the acid subsides and right before the yeasty, cobwebby and peppery finish. As I near the end of my portion of the bottle, I think I can get a little, very deep chocolate underneath everything else in the finish, and a little more pronounced powdery chocolate in the middle. Overall, I’d say this is like a spiced gueueze, the acid forming a core around which all the wonderful spices play in your mouth, and finishing dry. Very nice. mcbackus (725), Merritt Island, Florida, USA Sep 21, 2007 Updated: Apr 10, 2009bottle: pours a cloudy hay colour with some floaties and a large white head. aroma of sharp funky yeast, slight honey, and some floralness, and ends with hints of malt. flavour is kinda light with some funk upfront and a bittering finish. i get just a hint of the peppers in the middle of my palate. very easy drinkin abd enjoyable for being so interesting with the recipe.

the aroma has become extremely awesome on this beer. lots of th efunky but clean fantome yeast that i have come to love. tons of honey and a great orchard flower aroma. slight apple also.
with just a faint hint of spice. flavour aroma is simply smooth with a near perfect palate it has mellowed out alot and become even more drinkable than before. great yeasty character and nice floralness. this is the same batch as the first rating and has got much better. unclemattie (2370), Georgia, USA Sep 18, 2007 Shared w/ TitiJo. 750mL green champagne bottle. Rusty amber color. Almond colored head. Aroma of Belgian Farmhouse Saison. Flavor is very smooth and easy drinking. I don’t detect any cocoa flavors. Although the cocoa should be bitter enough to add balance to the brew. bdigital (585), Ft Wayne, Indiana, USA Aug 31, 2007 Bottle numbered 086/477044. Pours a cloudy dark mustard color with a big, foamy white head. Aroma consisted of faint citrus, hay, yeast and an ever so subtle note of chocolate. After realizing that no matter how hard I tried to pick up on the chili pepper and couldn’t, I held out hope that it was lurking in the taste. Lest I say that I’m still wondering what the hell happened to the chili. Overall pretty bland yeasty taste with a mild citrus-nutmeg note. I was quite underwhelmed by this, even though I had high hopes.
