LilBeerDoctor (1479), East Setauket, New York, USA May 11, 2008 Bottle. Pours a cloudy dark amber with a white head that persists. Aroma of sourness and sweet fruits (like a sour ale). Flavor initially of the same sweet/sour notes , slight funkiness, followed by a cocoa powder finish. Originally I thought the palate on the finish was rather weak, but when I picked out the cocoa powder, it was awesome! If you can pick it out, a sweet combination. A tiny sting from chilli. Aroma of cocoa powder, earthy hops, citrus, and spicy yeast. Taste is pilsner malt, earthy hops, citrus, and yeast spice. Medium thin mouthfeel with a mild amount of bitterness, well hidden alcohol, and a slightly tart finish. This bottle doesn’t contain the amount of Fantôme funk that I have come to love but is a very good Saison none the less. Pours orange with a small, fizzy, white head, somewhat lasting with fair lacing, sparkling. Aroma is average malt (straw, hay, cereal), average hops (citrus, grass, herbs), average yeast (earth, horse blanket) with notes of grapes, coriander, and pepper with a slight hint of cocoa. Medium bodied, slick texture, average carbonation, and a bitter finish. Long duration, light sweetness, moderate acidity and bitterness. Sweet spicy flavor with yeasty notes and no chocolate notes.
