A Belgian ’saison-style’ ale brewed with cocoa powder and chili pepper? Ay, Caramba! Score another first for the unpredictable brewery that was the first -- and so far the only - brewery to make ales out of dandelions and mushrooms, among other things.

aroma: cereal, citrus, sweat, lemon apparenza: golden, hazy, minimal head, gusto: light sweetness, medium bitterness, heavily sour, palato: light body, creamy, soft carbonation, astringent, natale dell’elfo tira fuori questa birra che aveva "dimenticato" nel magazzino per 5 anni,dove l’aveva riposta perchè assaggiandola aveva avvertito tutto,tranne il cioccolato,reputandola andata a male.. in effetti la birra è superparticolare,ma di cioccolato c’è ben poco..aroma incredibilmente strano (probabilmente è per il fatto che non ho mai assaggiato birre acide)..acido,limone,sentori maltati,pelle,sudore,ma che roba è?? gusto identico,astringente,amaro,acido,poco frizzante..e il cioccolato???merita sicuro per l’estro del magico Dany (forever in my heart),da approfondire! bevuta all’elfo

750 ml bottle. Pours a hazy dark golden orange color with a medium sized off white head.. The aroma and flavor have the standard Fantome funk, earthy, apples and pears, some chili peppers on the nose with the lightest amount of cocoa powder coming through. I kind of like their own funk, but hoped for a bit more with this.

Bomber. Pours an amber orange with a beige head and aroma of grains, light chocolate. and yeast. Taste is interesting, the chillies and chocolate come through, along with spices and yeast notes into the finish. Unique and interesting brew

With Z ( from a surprise visit from Orlando ) pours an amber orange color with a large ’ fizzy’ head. Nose is grainy with subtle cocoa. Taste is light chocolate , some spice and yeast with some tartness in the finish. A different saison for sure. Quaff Score 6 / 10

Douberd (2292) - Arnhem, NETHERLANDS - SEP 2, 2014
(Fantôme Chocolat) Bottle 750 ml at home, poured into a tulip. ABV 8% Murky body, but nice colour on it, a bright golden orange. Head is only a finger tall, a bit thin, with low retention, leaving minimal lacing on the glass. Aroma has leaves, brett-like funky notes, musk, straw. Taste yes is saison, with chocolate on the finish but quite faint. Again leaves and musk, and I can’t really say I taste the chillies, grapes, ashes. Medium thin body, soft carbonation, extremely dry on the palate, it’s like my mouth was getting totally dehydrated with every sip. I never had something as dry as that. Overall a very weird beer, I expected more chocolate and/or a chili pepper burn to be honest.

Not going to post in depth taste notes on this since this went straight down the sink but going to post some thoughts since I have been an avid Fantome fan since the beginning. Everything about this beer screams out that the base saison under that disgusting cocoa unbalanced taste is a very good beer, but why on earth add so much cocoa to a dry and funky saison. This is unbalanced beyond everything I have tasted. faux pas dany, faux pas !!!!

Bottle @ DØE Sommerfest. Pours hazy orange golden with a small offwhite head. Aroma of light malt, yeast, mild brett notes, flowers, sweet fruit. Flavor is malt,, light sourness, yeasty, mild brett, fruit, peach. flowers. No trace of either chocolate or chili. Medium body, soft carbonation, light acidic finish. Nice and refreshing beer. 200814

Another weird ale springing from Danny Prignon’s mind, a saison with cocoa and chilli added. Yellowish white, very rocky, crackling, sticky head, deep orangey brownish colour, cloudy. Assertive aroma, fascinating, cloves, nutmeg, pepper, leafy hops, liquorice, orange, figues, earth, leather, jute, wood, hazelnuts and a kind of Brett-like funkiness. Dried fruits, complex, nutty malts, spicy (probably the chilli talking), light sourness, a very faint hint of cocoa powder in the finish along with warming alcohol. This was a pretty weird experience I must say, but I had expected nothing less from this brewery.

750ml bottle, pours coudy golden brown with a lush, lasting foamy head, aroma is a whole gamut of flavours, caramel, honey malt, lime marmalade, coriander, peach, overripe orange funk and barnyard, but the chocolate on the label seems to be a misnomer. Palate is full, oily and rich, sweet, with an astringent finish. Not too bitter. Another interesting beer from Fantome.

75cl bottle bb12/2014, Geers. Had this a while back, just found the yeast-dregged bottle in the cellar. As has been remarked before: the chocolate is a tantalising suggestion on the label, nowhere near the beer itself: the powdery dryness of Nesquick cocoa and ground pepper infects the off-target vegetable notes and overripe fruitiness in this Fantome of a style muddler, yeast and dry fruit sugars conquer brett and earth. Pours exquisitely brackish, even for F. As far as announced accidents go, this spice cabinet implosion is all over the place, yet drinkable and every sip interesting.

Light brown colour with thin, fizzy head. Aroma is funky, tart, yeasty also slighrly medicinal. Quite a thick, oily texture. Flavour is similar to the aroma although there is a mild cocoa taste in the finish.
