A Belgian ’saison-style’ ale brewed with cocoa powder and chili pepper? Ay, Caramba! Score another first for the unpredictable brewery that was the first -- and so far the only - brewery to make ales out of dandelions and mushrooms, among other things.

Tasted on 12/16/12 from a capped and corked bottle purchased at Sergio’s. Pours cloudy light yellow with a thin white head that leaves average, lasting white lace. The nose is barnyard and funk, like most Fantome beers, but the chocolate is more or less non-existent...I suppose that there is a cocoa tinge on the nose as the beer warms, but I know I am looking for it at this point. There is a very lightly spicy chili aroma stinging my nostrils, however. The flavor is pretty much the same, lightly tart with plenty of barnyard, but no real chocolate and just a touch of chili. The body is light with lively carbonation and a long tart, funky, and very lightly spicy chili finish. This is a solid Fantome brew, but it pretty much just tastes like the regular saison.

UPDATED: JUL 15, 2016 Slightly murky orange gold with dense head. A: yeasty with pepper and choco note, citrus, earthy note, malts. T: follows aroma, nice saison with cocoa powder note, bitter peppery development, intense bitter finish with chocolate notes.

Pours a brown body with a none existent head. Very faint aroma. Sour and funky taste with a rather strange warm feel. More strange than interesting.

Bottle from Vinmonopolet, Kvadrat enjoyed at Aaserøy. Pours hazy nut brown with a small off white creamy head. Aroma of chocolate, chewy malts and yeast. Taste is light sweet yeasty, weak acidic peppers, weak chocolate in the finish, more weak chili, but overall a OK beer.

At Mrk’s. Bottle courtesy of Maakun. Amber colored beer with quick diminishing head. Sweet caramel malts, sweet roasted chili peppers, grassy, lemon, (lemon balm), honey, mushroom like mold. Quite sweet, light sour bend. Light carbonation, creamy feel, very spiced.

Bottle shared. Slight hazy copper with little clumps floating around. Lots of spices, caramel, sugary, cocoa, quite light chili, peppery yeast, lemon and lemon balm. Bit over medium sweet, light spicy, under medium bitter and a sour touch. Medium bodied. Quite weird but pretty decent.

Bottle shared at a tasting at Alexey’s place. Thanks Euro Summer Secret Santa 2015. Hazy amber with a quickly dissolving white head. Funky aroma with a little chili and then chocolate. A little funky and bitter with delicate hints of chocolate in the mouth. Medium body, quite carbonated, slightly funky finish. Quite nice and far from what I had expected it to be - was sure it’d be stout.

Bottle 750 ml. Clear copper color and frothy head. Sour-dough and caramel aroma with spruce hint. Taste is form light sweet to medium bitter. Medium body, average carbontaion. Bitter finish. I dont’t feel any chilli or cocoa, but this adjuncts definitely improve taste and aroma.

Où, Quand, Comment : Bouteille 750ml, au Bistro des Bières Belges à Saint-Hubert (printemps 2007).
Visuel : Couleur : ambrée-brune. Apparence : voilée.
Arôme : Levures fruitées (agrumes, fruits mûrs) et sauvages, léger d’épices, notes de bois humide, de miel et malt sucré.
Goût : Entrée de bouche : Goût de levures sauvages acidulés, fruitées (agrumes, petits fruits sûrs) et épicées Un support malt sucré est également présent avec des notes de miel, de pain ainsi que des notes de houblon floral.
En bouche : Corps : mince-moyen. Effervescence : moyenne-élevée. Texture : légèrement huileuse. Finale : moyenne, composée d’un légère aigreur fruitée et d’épicée avec des notes amères de houblon floral ainsi que quelques traces d’alcool.

Bottle sample at a tasting at Alexey’s place. Thanks kerenmk. Hazy yellow. Nice funky aroma, fruity, with a floral note, a vegetal hint, and a cocoa hint. Tart flavor, funky, with fruits, flowers, faint cocoa note, and a light vegetal chili note. Medium-bodied. Nice. Cocoa and chili are very faint.

giallo ambrato con una buon cappello di schiuma, viene subito odor caratteristico del lievito saison, profumo debole di fruttato e speziato, al gusto di corpo alto, bevuta inizialmente dolce ma poi ben bilanciata da un discreto amaro accentuato da sentori di pepatura, retrogusto si sente un lieve gusto di cioccolato amaro ma nascosto da gli alcoli ben presenti!
