COMMERCIAL DESCRIPTION
A Belgian ’saison-style’ ale brewed with cocoa powder and chili pepper? Ay, Caramba! Score another first for the unpredictable brewery that was the first -- and so far the only - brewery to make ales out of dandelions and mushrooms, among other things.

Opened the bottle with high hopes. But had to dump this one down the drain. Easily the worst bottled beer I have ever opened. Enough said.

750ml bottle Poured a cloudy light brown color. Aroma was a bit funky leading me to believe this was a bret beer. Flavor was slighty funky with a mild chocolate flavor. Not what I was expecting with a "chocolate" beer. Very interesting tasting a choc. beer that was a belgian style instead of a stout.

Had this a number of times over the years but these notes come from a 1 year old bottle (I believe) at a Fantome tasting June 2010. Pours amber, fairly clear for a Fantome, slightly off-white head that doesnt last long. Aroma is slightly skunked, a bit chocolatey (partly malt/adjuncts partly age), and a bit of citrus. Flavor is barely skunked at all (compared to the nose), lightly of chocolate, kind of light on the malts as well. Strange that this is 8% abv, the flavors are more mellow than I’d expect from the nose and the color. Body is medium. Enjoyable beer.

The beer was a cloudy tan, with a big off white head. Floating in the beer were a few little pieces of chocolate. After swirling the beer around in a glass i could smell a hint of chocolate. The beer tasted like a run of the mill pilsner, and the occasional little chocolate bit tasted like stale chocolate. No hint of chili pepper at all. I drank the beer close to the best by date, so wonder if it was past it’s prime at that point.

Bottle:Quite flat with a head that disappeared within a minute. Nice copper color. Lactic acid bacteria SO sour to taste. Not for me!!

Hazy maple gold color with thick white head. Aromas of spice, with faint pepper aromatics in the background as the beer warms up (this beer shows better as it warms). Very creamy mouthfeel, intially sweet but a powdery dryness appears at mid- palate. Long dry finish.

i was excited to rate this! my score doesn’t count anyway because i am under 10 reviews BUT i took the cap off and noticed instantly the cork was creeping up-uh oh- ran to the kitchen in time for the cork to blow and every ounce of liquid in the bottle to vanish into foam in about 1 second...oh well. not sure i like the smell of it all over the counter top-low score for aroma and way high for carbonation. no worries fantome! i still like you!

Subtil mélange du chocolat à la bière ce qui nous donne une légère amertume. Très rafraîchissante en été

I shared a bottle with Marcus Siu at the Louisville Beer Store. A - Pours a nice medium-dark yellow with a nice fluffy white head. It is evident from the pour that there is moderate carbonation. S - Smells super funky… spices are evident with fruitiness in the background, oranges? Also, malty/earthy notes, and Belgian yeast. This is one of the funkier Fantome brews I have tried. T- Tastes of funk, spices, yeast, bread, earthy notes, and light fruit. Funk is still there, though it is less funky than the nose. I get a hint of the pepper, and the chocolate brings a nice earthy balance. M – Like I stated earlier: moderate carbonation with a medium to light body. O– This is a funky saison for sure. Honestly, this Fantome exceeded my expectations a bit. Marcus said it was his favorite, and he liked it better than the Fantome Noel.
