A Belgian ’saison-style’ ale brewed with cocoa powder and chili pepper? Ay, Caramba! Score another first for the unpredictable brewery that was the first -- and so far the only - brewery to make ales out of dandelions and mushrooms, among other things.

Imported 750. 2005. The house character is here, but it’s definitely not as intensely complex as regular Fantome. Beer pours a murky light amber with a large, white, slowly diminishing and mostly lasting head. The aroma is malty with moderate notes of toasted grain, light notes of caramel and cookie; hoppy with a light notes of lemon and herbs; Yeasty with moderately-heavy funky notes of basement, barnyard, horseblanket, perhaps a teeny tiny trace of band-aid tucked somewhere in the back; Moderate notes of spicy alcohol, orange zest. The flavor is lightly sweet, moderately bitter, lightly acidic with a long, lightly warm, lightly bittersweet finish. The body is light-to-medium, the texture is watery and the carbonation is lively.

75cl bottle shared with Tomaz.

Bottle from EtreGourmet webshop. Deep massive hazy orange body, massive foamy head. Nose is oranges, wheat, citric tones and hints of grass or hay, can’t make up my mind. No chocolate yet. Taste is citrus, hay, yeast and smokey, peaty tones from mid-palate and onwards, lasting through the finish with some grassy hop hints. A bit strange, but not unpleasant. Slightly fizzy palate, but OK. Alcohol is extremely well hidden, I though this was a 5 or 6 % brew until I checked the bottle. Very original, but where’s the chocolate? That was a bit of a letdown as the bottle definitely stirred up some anticipation. Regardless, this was a nice beer.

750 ml bottle into tulip glass, no bottle dating. Pours hazy golden orange color with a small 1 finger foamy white head with ok retention that reduces to nothing. No lacing, with a fair amount of carbonation streaming up. Aromas of cocoa, apple, lemon, cherry, pepper, biscuit, earth, grass, hay, big funk, and yeast spices. Some fairly nice and well balanced aromas with good strength. Taste of tart apple, cherry, lemon, chocolate, chili, pepper, biscuit, funk, hay, grass, and yeast spices. Fair amount of tartness on the finish; with lingering notes of grass, tart apple, lemon, and yeast spices on the finish for a good bit. Nicely complex and balanced flavor, but it has a bit of an odd flavor presence along with the normal Fantome funk. Medium carbonation and body; with a fairly creamy and slick mouthfeel. Smooth to drink but is still a sipper with the tart flavors. Alcohol is well hidden with hardly any warming noticed on the finish. Overall this is a nice and complex farmhouse ale. A touch on the odd side with some of the flavors, but it was still enjoyable to sip on.

75 cl bottle @ Delirium Cafe.
Rated on 20100718.
Pours murky brown color with medium head. Aroma of spices, fruits, herbs and mild cocoa notes. Flavor of cocoa, spices, yeast and fruits. Quite perverted mesh of flavors to say the least.

Little cloudy light orange beer, flakes floating around, small white head, unstable, non adhesive. Aroma: little urine, geuze touch, lemony. Infection? MF: good carbon, medium body. Taste: lemony sour, tart green apples, bitter touch, quite some spices, bit lemony. Aftertaste: vinegar, lime juice, cactus jenever, little bitter.

Subtil mélange du chocolat à la bière ce qui nous donne une légère amertume. Très rafraîchissante en été

750 ml bottle split with my wife. Poured into a tulip glass. a: amber with a foamy bubbly head with ok retention. The head was about 1" high. Reduces to lacing s: slightly sour smell, mixed with ever so slight citrus. t: fairly complex beer, surprisingly the most dominated flavor is citrus. There is a light note of pepper... which in my mind almost acts like the bittering substance. Not much cocoa, slightly disapointing.

It pours a clear yellow color. Bubbles arise from the bottom of the glass. Very small white head is poured. Quickly dies into a small bit of lacing around the glass. Warning when taking the cork out of this beer. The cork is very brittle. I was afraid some of the cork had got into the beer but it didn’t. Just a heads up. There is no cocoa in the aroma. At least I didn’t pick up any. Instead it has a small amount of funk, hay, lemon, faint smell of chili, and yeast. Maybe if I drank this brew when it was fresher I would of picked up the cocoa. Still it was an inviting aroma. You’re greeted by a tart, light, and enjoyable taste. Tart lemons, spice, yeast, and a nice funky musty taste. The chili is there but isn’t big. It does add up overtime to add a little bit of a hot kind of feeling and taste but really isn’t huge. I loved the small tartness this beer gave off mixed with the mustiness. Mouthfeel is light, crisp and refreshing. Goes down like a champ.

Green 750ml bottle with cork shared by Patrick. Amber colour with a white ring of foam around the glass. Some brett on the nose but I was somewhat watery, I’m still searching the chocolate and the chili. Some oxidation is perceptible. The taste: watery and oxidized. An old bottle or a bottle that is going downhill.
