COMMERCIAL DESCRIPTION
A Belgian ’saison-style’ ale brewed with cocoa powder and chili pepper? Ay, Caramba! Score another first for the unpredictable brewery that was the first -- and so far the only - brewery to make ales out of dandelions and mushrooms, among other things.

Bottle. Pours a cloudy deep orange with a thin head that dissipates completely and quickly. Aroma has a bit of light chocolate with sweet grains and a touch of spice. Flavor is lighter with light flora, light fruits and a bit of tartness with a finish that has a touch of chocolate.

Not going to post in depth taste notes on this since this went straight down the sink but going to post some thoughts since I have been an avid Fantome fan since the beginning. Everything about this beer screams out that the base saison under that disgusting cocoa unbalanced taste is a very good beer, but why on earth add so much cocoa to a dry and funky saison. This is unbalanced beyond everything I have tasted. faux pas dany, faux pas !!!!

Bottle @ DØE Sommerfest. Pours hazy orange golden with a small offwhite head. Aroma of light malt, yeast, mild brett notes, flowers, sweet fruit. Flavor is malt,, light sourness, yeasty, mild brett, fruit, peach. flowers. No trace of either chocolate or chili. Medium body, soft carbonation, light acidic finish. Nice and refreshing beer. 200814

Another weird ale springing from Danny Prignon’s mind, a saison with cocoa and chilli added. Yellowish white, very rocky, crackling, sticky head, deep orangey brownish colour, cloudy. Assertive aroma, fascinating, cloves, nutmeg, pepper, leafy hops, liquorice, orange, figues, earth, leather, jute, wood, hazelnuts and a kind of Brett-like funkiness. Dried fruits, complex, nutty malts, spicy (probably the chilli talking), light sourness, a very faint hint of cocoa powder in the finish along with warming alcohol. This was a pretty weird experience I must say, but I had expected nothing less from this brewery.

750ml bottle, pours coudy golden brown with a lush, lasting foamy head, aroma is a whole gamut of flavours, caramel, honey malt, lime marmalade, coriander, peach, overripe orange funk and barnyard, but the chocolate on the label seems to be a misnomer. Palate is full, oily and rich, sweet, with an astringent finish. Not too bitter. Another interesting beer from Fantome.

75cl bottle bb12/2014, Geers. Had this a while back, just found the yeast-dregged bottle in the cellar. As has been remarked before: the chocolate is a tantalising suggestion on the label, nowhere near the beer itself: the powdery dryness of Nesquick cocoa and ground pepper infects the off-target vegetable notes and overripe fruitiness in this Fantome of a style muddler, yeast and dry fruit sugars conquer brett and earth. Pours exquisitely brackish, even for F. As far as announced accidents go, this spice cabinet implosion is all over the place, yet drinkable and every sip interesting.

Light brown colour with thin, fizzy head. Aroma is funky, tart, yeasty also slighrly medicinal. Quite a thick, oily texture. Flavour is similar to the aroma although there is a mild cocoa taste in the finish.

Bottle 75 cl. Pours hazy darker golden in color with an off-white head. Biscuity malty notes, some green pepper, hints of fruityness in aroma. Then there is that damp woodyness and funkyness as well present. Quite nice. Tartness, apples, fruity notes in taste. Funky and fruity notes in aftertaste with a slightly hint of burning chili in finish perhaps.

750mL Champagne bottle, tirage cap AND cork!? Odd BB Dec 17!!! Been wanting to try a beer from this brewery for years, finally found one! Perplexing looking "chocolate" brew - hazy pale golden straw body, big dense fluffy head. Aroma delivers funk, awww yeah - Parmesan cheese, clove, green capsicum, amyl acetate ester banana component, white pepper, hay, light sweatiness. Daresay, a unique texture - lean, dry, somewhat boozy, oily, spicy, phenolic, lively carbonation, with alcoholic warmth, mild chili heat, acetic acid, pyrazine astringency, yet smooth, slick, and creamy. Quite odd. So much going on here... Starts simple, familiar, with pale malt, cereal-like backbone, leading to spicy phenolic yeast notes of pepper, clove, then esters of banana & pear, then bitter cocoa, green capsicum; both imparting their own bitterness, and then it gets properly funk with faint undertones of hard cheese, white vinegar and horse sweat. Finishes bone dry, lingering bitterness, grassy, minerally, very different. Wow, nothing like I could have ever imagined. Hugely rustic, and possibly a bit challenging for many, but I loved this. Totally separated from the ingredients it boasts on the bottle, yet they’re there in a savoury, complex form, wasn’t expecting that.

Perfekcyjne piwo. Niemal doskonale trafiajace w moj gust. Milosnikiem kwaskowatych lambickow jestem, a tu to bylo wyczuwalne w smaku i w nozdrzach. Spocona konska skura i podpieczone drozdze wraz z koszona i wilgotna trawa. Zbozowe, rumiankowate w zapachu. Kolor metny zgnilo ciemno zolty do jasno brazowego. Metne calkowicie, ze nawet u podstawy nozki nic nie przeswitywalo. Spory plus za zastosowanie przypraw, papryczki pieprzu po przelknieciu dostawalo sie po paru minutach rumianych policzkow. Piana obfita i caly czas stojaca i powolutku opadajaca. Niesamowite piwo. Ziarna kakaowca nie przyblizaly do czekolady bo jej sie wogole nie wyczuwalo. Piwo dajace niezlego kopa smakowego i rozgrzewajacego. Alkoholu jakby nie bylo za to inne skladniki rozgrzewaly i pobudzaly do dzialania. For me this beer is absolutly Perfect and lovely Taste at my Home.
