COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

Bottle shared with Ben and Tom. Hazy brown colour, beige foam. Soft carbonation. Complex aroma of port, spices and dark fruit. Some roastiness with a sour touch. Well balanced and complex beer. Good drinkable. Very good.

25.4oz at 50° on 12/26/11

Pours an increasingly hazed somewhat desaturated dark amber, medium delicate off white head with decent duration

Nose is spicy, sour and slightly sweet. A range of fruits and fruit juice are balanced and somewhat muted by the added spices. Taste follows nicely on a somewhat thick, creamy, smooth body with solid carbonation. Sourness and spice resonate.

750 ml bottle. Pours a dark orange amber colour with a white firm head. Aroma of orange, some chocolate, dried fruits and some spices. Flavour of chocolate, green apple tartness, grass, caramel sweetness, plums, a bit of funk and wood. Full bodied and thick mouthfeel with soft carbonation. Alcohol is there, but very well hidden. Like a Belgian Strong Ale + Saison hybrid. Rich and complex. Elegant as well.

Winter spice notes, rich sweetness, hints of forest...and yet it’s still got that Fantome yeast tartness, really interesting beer. Very very good.

750mL bottle. Clove and cardamom in the nose. Flavor is refreshingly tart actually, with some lingering spiciness in finish. ---Rated via Beer Buddy for iPhone

Good malty beer, quite a bit of refreshing sourness, although very balanced. Slightly spicy. Not necessary a saison, but a good malty balanced beer.

750ml bottle, thanks to DanielCoor for sharing! Hazy amber red orange color. Thin khaki head. Couple loose ropes of lace. Smooth, soft, lighter carbonation. Pretty nice texture, nicer than expected... Kind of creamy. More dry finish. Bigger body. Smooth, kind of creamy lighter carbonation. Good creme, dark fruit, light flavor. Some light red candy flavor. Pretty damn nice belgian noel. Good earthy hop to it. Light sweet taste, light sweet bite, good bitterness. Nice stuff.

From the green, corked 750 ml. bottle. Hazy bronze-amber pour leading up to a lingering off-white or cream colored head. This has had a few months to age. Toasted dark malts, pear, apple, and a touch of spice on the aroma. Maybe some booze but not overpowering in that sense. Medium to full body. Belgium - here I come. Yup. In the taste I get roasted biscuit malts, yeast, low profile Belgian sugar sweetness, a little clove, and a lingering bitterness. Dry finish too. Not necessarily worth paying $12 for the bottle but still enjoyable.

750ml bottle pours a light browny red color without much head. Lots of caramel flavor, mild overall.
