Taste is roasty with black pepper, musty, woodsy, and spicy. thewolf (5623), Kolding, Denmark Dec 26, 2007 Updated: Dec 28, 2007Bottle.
Pours a deep red with a frothy off white head that disappears quickly. Aroma is dry, biscuity, coriander, cinnamon, pine, heather, apple, Belgian sugars. Relatively high carbonation. Flavour is dry and crisp with light smokiness, caramel and lots of flowery hops. The spices take over and are stunningly balanced, lots of cinnamon and coriander, nutmeg and heather. Then a heavy peppery yeast finish kicks in. A seriously wonderful brew. MesandSim (5790), London, Greater London, England Dec 24, 2007 A Mes rate: 75cl bottle from Dranken Geers. Lovely semi cloudy deep amber colour with an excellent white head and lace. Glorious yeasty sourness in the aroma. Almost wild yeast. Bready and earthy with some light fizzy citric notes. Awesome funky flavour. Like the barrel aged character you get in a Jolly Pumpkin but so much better. Amazing freshly milled wood, lemon zest, clear spicy malt and a beautiful tangy sourness. Odd chalky note in an otherwise awesome finish is the only let down. Wim (1278), Turnhout, Belgium Dec 23, 2007 dark amber colouredbody with a average white head a fruity sour aroma a sour bitter taste and a bitter sour alcoholic finich thebeertourist (2750), Oslo, Norway Dec 18, 2007 On tap at 13e Kerstbierfestival, Essen. Hazy copper with a yellowish, lacing head. Delicious, sour fruit aroma. Hints of cherries among other hard to describe fruit aromas. Sour fruit flavours, some yoghurt and spices as always with Fantôme. Fantôme beers are in a class of their own. yespr (11613), Copenhagen O, Denmark Dec 17, 2007 75 cL bottle, Kerstbierfestival 2007 in Essen/Belgium. Pours copper and hazy brown with a little lacing head. Aroma is brett and slight acidic. Flavour is acidic and with a light citric note. Finish holds a slight malty note and a distinct citric brett note. Lovely light spiced. LeopoldStoch (201), Green, Ohio, USA Dec 16, 2007 ’05 or ’06 vintage..not quite sure. Shared with my brother and Miketd. A pretty interesting and different saison. Pretty good stuff, just very different from what I expected. Very woodsy and tart aroma. Lots of spice and yeastiness in the nose as well. Much dryer and tart in the flavor than I expected. Some peppery spice and alcohol in the finish. Good stuff and very very different than any other saison I have ever had. It seems to be a good fit for a winter interpretation of a belgian saison.
