COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

Tasted at the Carolina Crew gathering, Greenville NC. Vintage 2006. Dark amber pour with fizzy tan head. A touch of funk and apples on the nose. Surprising sour flavor combined with caramel and chocolate was very nice. Slightly bitter and dry finish. Another great beer from famtome.

Bottle shared by ucusty. Thanks Dave! Pours dark amber with a nice tannish head. Nose is cocoa, roasted malt, and a little bit of funk. Flavor is similar, very earthy and dry, with a bit of cocoa. Fantome always excites me and this one did not disappoint. Glad I finally got to try it.

Pours dark mahogany with big light brown head. Sour, peppery aroma. Roasted malt and peppery flavor with Fantome funkiness. It’s mildly sour with some earthiness. Medium body with average carbonation and a dry finish.

Shared with Lee. Pours a blackish red with an overflowing tan head. Slightly metallic grapefruit sour, orange aroma. Grapefruit sour, orange peel, malt taste with a slightly thin body. As it warms, the metallic taste gives way to slightly more sourness. As always, another unique brew from a great brewery.

A brown coloured beer. A nice head. Hints of brunes and some pepper in the nose. Suitable sourness. Maltiness and licorice and spices in the taste.The best in Santas bag.

picked up at the PP Carlsbad shop: heavier than i expected for a saison, poured nearly flat, but it is accompanied with a lot of flavors and aromas that prove its complexity; easier as it warms, there is practically no alcohol present, and has so much going on without what could be a horrible mushy gist; this is the winter saison? call me naive, call me ignorant, but i want something less in potential notes that also hides the alcohol, but allows me to write specific, solid notes... i need more time with this seeing as how the average score here is 3.73.
