Commercial Description:
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

Bottle sampled with Stegosaurus. Pours brown with a tan head. Aroma of spices, roast, and alcohol. Flavor is roasted malts, spices, and citrus. I hate this style, but this is drinkable.

750mL bottle. Deep red-brown color with a creamy dark tan head. Mustiness and tartness over a rich earthen peppery spiciness in the aroma. Muted floral and perfumey flavors hint at sweetness but do not fully actualize it. Some brett horsey and damp hay character persists, leads into the finish where it is met by a a slightly oily evergreen flavor. Mouthfeel is fairly thin, very dry.

750 ml bottle. Dark brown and slightly hazy. Thick creamy off-white head. Rich spicy complexity. Medium-bodied. Quite dry with a prickling feeling. Light flavours. It is the spices in the aroma that is complex. The rest is rather disappointing. The alcohols are nicely hidden. Somewhat sour finish.

This is my first saison. Bottle. Pours a dark brown color with a tan head. A very generous head that lasts for quite some time. Aroma is cocoa, tobacco, and pepper. Taste is very malty. Very dry taste but not too bad. Tasting chocolate and wheat primarily. Interesting beer, I would love to try more of this genre.

Piscator was right. This beer was definitely too wild for my liking. Although I missed the "wet hay" flavour. How does he know what "wet hay" tastes like anyway?

Dark amber in colour with medium carbonation. Notes of mint, chocolate, and red wine in the nose. Insane flavors of nutmeg, port, cinnamon, coriander, lemongrass, lemon, wet hay, spruce, and cork. As the beer warmed, the barnyard flavors became far more apparent. A bit too wild for the folks who shared the bottle with me, but I love beers like this. Another fantastic beer from Fantome.

Offwhite small head. Opaque black body. Soft old hop aroma with some acidity, and very complex spices. Slightly vinuous. Massive dark oil taste with some burntness. Massive spice impact, hard to analyze. Somewhat acidic, with notes of wild berries. Aftertaste of burnt toast. Taste of burnt oil and spices lingers. Not bad, but too massive for me to enjoy. (0.75l bottle.)
