Rich roasted malt aroma with a bit of alcohol and slightly sour. Sweet malt, chocolate, spice, touch of tartness, woodiness all combining in the flavor. Nottable alcohol. Not as straight forward and clean as many of their other beers, but still good. MiP (8793), Sønderborg, Denmark Nov 10, 2005 Bottle. Sour cardboard aroma. Dark chestnut colour. Nice and stable, creamy light brown head. Flavour has a little cardboard too. Nicely peppery, but also somehow dry. urbnhautebourg (972), Annapolis, Maryland, USA Nov 4, 2005 Fantome is one of my top 5 favorite brewers, so I was terribly disappointed with this one. Perhaps this became oxidized, but the condition of the bottle and cork showed no signs to suggest it. My sample was overly sour, a sourness which blocked out most every flavor--I couldn’t even detect the alcoholic warmth, so harsh was the sour onslaught. Occasionally, I sensed some darker malt flavors, but that’s about it. No finish to speak of, as the sourness dries any flavor, strangling it.I truly love Fantome’s saisons, but this one was a disaster. Drainpour. Cornfield (4892), Oak Forest, Illinois, USA Oct 24, 2005 Dark nutty brown with a HUGE creamy tan head, the nose presents a whirlwind of spicy scents atop a sweet caramel base. Raisins and chocolate blend with pepper, coriander, clove, a hint of mint, and the gods know what else Fantome threw into this Saison. This softly creamy drink has flavors to match the aroma with perhaps some pine and nuts and a definite alcohol zing to boot. It finishes on a spicy but slightly soured note. Very, very good drink.
