At first all of the other flavors are hidden under the tartness, but after a few minutes I can taste the spices alittle more and some belgian yeast. For a 10% beer this is surprisingly dry with a pronounced bitterness. But once again it’s the unique spicyness that stands out. I sense pepper and...and...? Head dissipates to just a trace later. Some fine light lacing. The nose is alcohol, no mistaking that. But also undercurrents of molasses and lively spices.
Tastes is amazing. Spicy (clove, cayenne) followed by a alcohol burn followed by big notes of sherry. Molasses and English toffee just below the surface. Hints of vanilla, hints of oak. Underlying fruity and cidery flavors. A new taste with every sip. Did I mention the spiciness? The most impressive characteristic of this beer is that although is is rich and malty, the mouth is not sticky or overly sweet. It has just enough balance to remain drinkable as well as deeply flavorful. Aroma is vinous, fruity, and has a hint of spice.Flavors of plum, carmel and a pleasent sourness up front, with a spicy warming finish. One of my favorite winter beers! Bov (5403), Bienne, Switzerland May 24, 2005 very dark brown colour with a little and unregular foam, the aroma shows a solid complexity and a great balance, it is vinous, fruity (plum) and spicy (ginger, pepper) with a hint of alcohol; the malt body is robust and slightly oily without being too heavy, some sweetness and a late moderate bitter/sour touch; the finish is long and very malty, gently fruity and strongly spicy with late notes of cork and cellar - just splendid
