COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

Hazy dark amber white head fades quickly... Mild aroma spicy, lightly peppery, flavor isn’t all that great not tart super spicy purfumy... Decent Belgian yeasty flavor not amazing but interesting if you like spiced winter beers medium full body...

2011 Vintage. Let me preface this review with this: WHAT THE F FANTOME!?!? this beer was absolutely disappointing in every way. I love Fantome, having had and loved both Printemps and Hiver, my expectations for this were high. Poured a deep opaque caramel-butterscotch color with a thin but tight head. Aroma is...depressingly similar to Anchor Steam. Tons of oxidative butterscotchy medicianal notes assaulted my nose; little to no Saison character, mostly a wrong-tasting syrup from hell. Taste is cough medicine, oxidization, raisins, and malt vinegar. Body is silky with low carbonation and a medicinal finish. Overall, this was really shitty. For $18, a bottle of beer better provide an existential experience. All this bottle did was make me curse and yell.

750ml bottle. Hazy amber with some sediment, looks sorta lika apple cider, with an off white head. Some farmhouse, more tart then sour, grass, fruit, slightly earthy. High carbonation, tart, fruity, medium body, dry, very nice.

750ml green capped and corked bottle. It pours a murky magenta brown with a fizzy white head that quickly dissipates with no lacing. The smell is intriguing for sure. It has a port/sweet white wine type smell to it with also some berries. There is both sourness and funk in the smell as well as some spiciness and herbal character. The flavor carries the port. It is caramally, rich, malty, raisiny, slightly boozy. There is still a good amount of tart berry and spices. The sourness is medium to high and the funk is abotu medium. Plenty of lemon acidity on the back end. Vinegar in the aftertaste. Interesting one. Fantome has some really strange flavors but they are interesting.

1/4/11. 750mL bottle thanks to rbrazell. Murky brown pour with very little head. Tart, sour aroma of lemon juice and grapes with plenty of yeast. More earthy flavor than the aroma with breads, spices, and lingering tartness. Nice!

I’m guessing vintage 2010/2011. Pours a muddy brown with a tiny khaki head. Nose is very spicy, grape juice, fusels, and yeast funk. Complex and interseting flavor is tart grape, sugary malt, black pepper, cheese rind, yeast funk. Definitely weird and hard to pin point flavors. Finishes dry. Not bad.

Pours a dark mahogany color with a large off-white head. Not quite what I was expecting from the nose. A bit of sour dark fruit and herbal notes to go along with various spices, especially pepper. There is some sweetness of malt to it and maybe a bit of yeast. The flavor is sort of sweet and sour with a pronounced prune and raisin flavor. Some more of the herbal notes are there as are somewhat faint spices. Weird. Not really my favorite Fantome.

Bottle to snifter. Pours hazy dark amber mahogany with a quick off white soapy head that dissipate to a thin tiny collar. Aroma is fruity and has some faint tartness and clove. Taste has spice like clove and Christmas cheer along with bubblegum yeast and and funk with some tartness in the finish. Palate is slick coating and dry with a warming finish. Very solid brew!
