COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

UPDATED: MAR 31, 2014 Bottle: Ruby & brown colored body with very mild translucency. Volatile, bubbly, gray-tinted head that takes its time settling down. Aroma is heavy, heavy yeast. Bubblegum, dry bread, very tame banana sweetness, tons of spicy coriander, clove, & pepper, even with a little mint. Taste includes mild grape & pear skins, followed by the huge yeast blanket. Funk clouds everything. Bubblegum, clove, cheesecloth, moldy cork, wet dog, and a back-end chalkiness that I’m not fond of. Very spiced, finish booms with clove, pepper, and even more funk. A little too out of kilter to be completely enjoyable. Decent at best.

My first Fantome. I am not certain of the vintage of this bottle, but I know where to find a stash of these for cheap. Think I will pick up the rest soon. Pours a clearish brown with minimal head. Scent is all Xmas spice. Flavor is sweet, spicy, and earthy. I was very concerned that this brew might end up a drain pour, but, whatever its age, it has held up well. Bottle - GA

Poured from a 750 ml bottle. Pours a murky brown to amber with a beige head of foam. Aroma has spices, figs, dry alcohol, grape jam. Tastes sweet and spice laden. Earthy.

Refrigerated 75 cl green bottle poured into a tulip. Pours dark amber with small off-white head. Aroma is fruit, low carbonation, medium body, and little lacing. Taste is dark fruit, caramel, honey, and spice.

Sample from bottle at tasting. Pours brown with a small fizzy head. Aroma is very spicy and fruity. Light roasted malt, toasted bread, chocolate, berries, red fruit, caramel, black pepper and other winter spices I can’t identify. Taste much like it smells, spicy and fruity. Like a spiced Belgian quad. Very smooth. Medium body, fizzy carbonation on the tongue keeps this light and easy to drink. A pretty unique beer that I enjoyed sampling.

Bottle. Brown colour with a beige head. Aroma is dry, malt, alcohol, caramel. Flavour is dry, malt, caramel, berries, hop, alcohol, spices. full body. Nice beer.

Pours a dark red color with a small head and nice lacing on the glass.

The aroma is sweet & very spicy. There is plenty of fruit character, pear & red apple particularly but also with some allspice and cardamom. The funkiness is on the mild side here.

The flavor is spicy, sweet up front with a dry finish. Some flavors of spruce, pear, & candied apple are fairly dominant at a cold temperature, however as this one warms it’s got a really nice bit of toasty malt and a lingering bitterness. The more I drink it the more the flavors seem to work together.

Really something to try a beer from this brewery that’s so low on brett and sourness. Very Christmasy, would drink again.

Pours a hazy amber from the bottle, not the dark color like they picture I was expecting, with fluffy cream colored head and very light lacing. Aroma is funky yeast, funky fruitiness, tartness, spicy anise and clover, and sour goodness. Taste is like a Christmas sour with no real hint of the booze. More please.

Copper orange with off white head. Small bubbles. Malty fruity esters. Fruit cake? Candied fruit malt sweet with some tartness and funky earth. Effervescent and light.

Lots of crazy stuff going on in this one. Smoothly roasted malt with a hint of tartness like green coffee beans, pepper and alcohol, a bit of smoke, spicy bretty influence.
