COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

sampled 75 cl. bottle @ Kerstbierfestival 2011: slowly I am beginning to learn that Fantôme is never, ever what you expect or want it to be, this is normal & non-infected (?) – A: clear red amber with a tanned head – S: sweet, candy, sweet spices, hint of cherry & Belgian hops – T: sweet spices, caramel, cherry juice, winter & Belgian spices, malts, hint toffee & touch yeast, inkling of pepper – B: medium bodied, easy to drink, medium carbonation, nice little, sweet malts & winter spices beer

Bottle shared at Chris’ house warming. Amber pour. Bubble gum nose. Spices, vanilla, and a fair amount of bubble gum. Might be a bit infected..

Sample at Ale Wine & Spirits in Powell on 12/16/2011. The beer is a reddish-copper color with a medium light beige head that dissipates steadily to an outer ring. Stringy lacing on the glass. Aroma of caramel malt, spice and a bit of lemon. Medium body with flavors of sweet malt, peppery yeast, fruit and caramel. The finish is short and mildly spicy. Above average overall.

Sampled at OBER Kerstbierfestival Essen 2011. Cloudy, opaque red-brown color, small beige head. Smell soap and sweetness. Taste is a nice balance of spices, malts, herbs and slightly some bitterness. Medium carbonation, medium body.

750 ml. bottle- Pours a cloudy dark orange with an off white head that is reducing quickly leaving a skiff and a collar. Aroma is funky brett, citrusy, raisins, coriander, tart. Taste is brett forward again, and the citrus and raisins are there too, but there is also a chocolatey and even orange flavor that is here, very unique. I do get the honey and caramel, leaving it really creamy. Body is fairly full, carbonation is high, Champagne style bubbles overload the mouth. Good beer if not great.

Bottle, vintage 2010. Muddy light amber with a medium white head. Malt and fruit in the aroma, also some funky notes, spices and berries. The same in the descent taste. Quite a lot of carbonation.

750 ml bottle. Pours a hazy golden brown with a moderate off-white head that lasted through the first quarter of the glass and left partial lace. Pleasant aroma of malt, lemon, spice, and just a bit of funk. The flavor is malt with honey sweetness, lemon that is bright and a bit tart, and spice. Mild alcohol warmth at the finish. Enjoyable.

Enjoyed at a holiday celebration with armed, Pete Howe, and Bill small. This beer reminds me of a grand cru. Generally sour, with some spicy notes. I suppose it’s okay if that’s what you’re looking for, but this isn’t my favorite style of holiday beer.
