COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

750ml bottle at the Bayou shared with Mike. Pours a deep red/amber color with a medium white eggshell head. The aroma is sweet fruity notes, dusty and spicy. The flavor is a very rich Saison; toffee, more cherry, light spices, quite sweet and hefty. Very good. I liked this a lot.

bottle... I had this beer twice in a week and they were totally different, only thing remotely close was the dark brown color... one was pretty sweet and drinkable the other was a sour mint bomb, so exactly what you’d expect from Fantome... can’t really recommend this based on huge variation

Pours a darkish red/brown. Aromas of spice, coriander, yeast, and alcohol. Flavor has an alcohol taste to it, mixed with a nice smokey dark fruit. Also has strong hints of spice and orange.

Bubblegum - sort of, spicy (with nutmeg, cinnamon, allspice?), spritzy, sweet, murky copper-brown like a pond after the cows have had a romp, head is thin but persistent, lacing is like heating sugar and butter in a sauce pan. Nice dessert beer.

2001 bottle from the long defunct K’s Deli, Bellevue, Wa; fuck i wish this place was still around, their combination of beer store, tap house, and on premise or to go deli food still has no equal in the Seattle area...back on topic, this 10 year old bottle opens with a big pop of the cork, followed by a slow flow of foam. Pours a clear ruby brown color with a lingering tan head. Earthy, musty basement, caramel, chocolate, wet wood, spicy peppery, red wine, spearmint aromas. Light to medium bodied with a smooth soft mouthfeel. Fucking fabulass flavors of lightly sweet milk chocolate, caramel, mint leaf, with earthy dry dirt, horse blanket, tart wine, nice warming peppery alcohol finish- i couild not put this glass down--insanely good brew

UPDATED: NOV 13, 2011 750 ml bottle. Pours a murky orange-brown with a large cream-colored head with great retention. Aroma is Brett-forward; very funky. No skunk! Nice. I was worried when I saw the green bottle. Taste is sweet and sour with a dry bitter finish. There’s a clover honey flavor in here. Very tasty. Carbonation is medium-high. Interesting. Good, although the second glass deteriorated, bringing the total down from a 4.1 to a 3.8.

75cl bottle. Pours a murky brown color with little to no head. Soapy bubbly foam. Aroma is similar to a mix between flemish red and a stout. Taste is tart upfront with a distinctive roastiness and wood notes after it. No alcohol at all, very impressive. This beer is smooth as hell and with the fresh tartness and lemon zest begs you for drinking more. Very dangerous and very delicious.

Dark brown body, fluffy cream head. Aroma malty, candy sugar, caramel, some spices. Sweet flavour, lots of caramel and candy sugar on a background of malts. Quite sweet finish. No real saison character. Fresh bottle, hope the saison character will develop more and balance the sweetness with some aging .
