COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

Red, Brown pour. Aroma is loads of dark fruits, very earthy with cracked pepper and some hints of chocolate cherry. Flavor is more dark earthy fruits, pepper, twang of yeast, spicy and malty, finishes relatively dry with some pepper.

2009 bottle from Bruisin’ Ales in Asheville. Pours chestnut brown; hazy and hazier as the pour gets down to the bottom. Nose shows chocolate malt, earth (dirt), sweat from a 2-year-old’s head after a nap (I got one, I should know), and pepper. Hints at acetic notes. Taste is also more sour and woody/earthy than expected. Herby, but nothing distinct making itself known. A good deal of peppery spice. A bit thin on the first half of the pour, but better as the settled goods enter the glass. Started loving this right around the last 4 oz of the glass.

Sampled at the High Rollers Tasting 2011. Pours a hazy orange with very small ring of offwhite head. Pretty sweet. A little tart funky orange citrus flavor. Good brew, but not exactly what I would have called a saison.

Dark reddish brown body with a medium off white head. Curious Flemish red qualities here- fruit sour acetic acid with cherry dark fruits, vanilla, and nutmeg spiciness. The flavor holds chocolate malt, cocoa nib, hints of tartness, and lemon citrus. Very interesting!

Dark walnut pour with a small head. Nose is surprisingly tart with red wine vinegar, dark fruit, cherry, vanilla; like a Flemish red? Good spice notes as well. Flavor is a bit odd- big bitter cocoa, chalk and more tartness. Bone dry. Very unique.

Murky brown pour with no head. Very little carbonation from this one. Aroma was full of sweet plum, raisin and light caramel. Flavors were slightly sour, tart cherry, sweet caramel. Unbelievably balanced and rather light. I can’t believe how much booze is in this. Mouth was light, smooth and without much carbonation. Light tart finish. This drank more like a sour than a saison, just great on all counts.

Geruch hefig, Gewürze leicht säuerlich. Antrunk süß und moussierend. Mitte angenehm gewürzig, säuerliche Tendenzen. Abgangs herb-trocken, gewürzig und sehr passend säuerlich mit einigen holzgen Noten. Sehr gut.

Dark red brown beer with a small beige head. Aroma of caramel, plums and raisins. A bit lactic sourness in the taste coming from the wild yeast. Fruity, caramel, dark fruits, chocolate and licorice at the end. Very well balanced beer

Pours a dark amber color with an off-white head. Aroma is of candied sugar, caramel, coriander, and a hint of floral hops and some alcohol. Flavor is malty with caramel, coriander, slight chocolate, sourness, spices, and wild yeast. Slight alcohol warming on the finish.

Cloudy chocolate coloured beer. Dry crisp palate. Mildly sour with a faint chocolate note. A sweetish fruity tone in the mid. Finishes dry and bitter spicy. Not that well joined up. A bit odd!
