COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

Clear reddish amber with a lasting off-white head. Aroma is sweet, malty, caramel, fruity, yeasty and spicy. Flavor is quite sweet and moderate bitter. Dry and moderate bitter finish with warming alcohol. 020812

Pours brown with a small off-white head. Aroma has notes of malt, tart and caramel. Taste is medium sweet and light bitter with a funky, tart, fruity finish. Body is medium, texture is oily, carbonation is soft.

Bottle. Pours amber with an off-white head.Aroma of funk, caramel, some floral notes, berries and spices. Flavor is sweet and warming with some funk, berries, grains, alcohol and caramel.Medium body, average carbonation.

Purchased at the Hunger Mountain Coop in Montpelier, VT. Pours a cloudy amber colour with a fizzy off-white head. Organic aromas with some spices. The taste seems pretty organic as well, with some mild sourness, citrus notes, spices and malts. Some very light roasted malt shows up later, and in the aftertaste. Kind of unbalanced, all over the place with not enough spices to be called a "bière de Noël".

(750ml thanks to adumbc) clear reddish, white bubbles. Nose of cherry, tartness, caramel, honey, rich, mossy, and complex. Taste is also tart, cherry, but lightly medicinal, spices. Near beer. Very good.

Pours hazy golden color with a small head. Aroma of yeast, citrus fruits, spices and some grass. Flavor of apricot, citrus fruits, yeast, spices and some toffee. A bit weird but in a good way.

750mL bottle, pours a murky dark brownish amber with a small, quickly dissipating head. Aroma of spices, see fruity notes, slightly sour notes, and a bit of funk. Flavour of sour funk, some berry fruits, and some winter spices. No hint of the 10%, and the body is actually quite thin all things considering. Decent beer, and always weird with Fantome.

Aroma: Spices, malt, some caramel, and some hay. No barnyard aromas like I’ve come to expect from Fantome.
Appearance: A hazy hazel color with a medium off-white head.
Taste: Medium sweetness, slight bitterness and sourness.
Palate: Medium bodied, semi-thick texture, and an average carbonation.

Aroma is somewhat spicy and malty with some earthy notes and caramel. Flavour is a bit odd with spices, some caramel and metallic off‐flavour. Good, but I expected more.
