COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

Bottle at the BA Buffalo Bottleshare. Pours reddish amber with a small off white head, slight lacing. Nose and taste of light toffee, cinnamon, and clove. Honey finds its way in one the finish. Body is full and creamy.

Bottle. Clear amber with a large ivory head. Aroma is fruity and peppery with some toasty notes as well as damp hay. Sweet with hay, autumnal fruit, sourish oranges. Warming but not overtly boozy - really wouldn’t guess 10%. Dry and fairly bitter finish with rosewater and woody cloves, pepper. And then right at the end, banana. Interesting, perhaps a little heavy.

"Darker and spiced a little differently than most saisons. A touch of chocolate, light holiday spices, farmhouse yeast and hops. Nicely balanced and tasty. Slightly over carbonated but otherwise really nice."

750mL capped & corked Champagne bottle BB end of 2016 Deep orangey gold body with slight haze, holds a dense white foam. Spicy aroma; pepper, coriander seed, nutmeg, cocoa, yellow raisins, banana, lychee(!?), bit of underlying funky sweat & barnyard, Body is somewhat rich at first, drying out with warming alcohol & acidity, lively carbonation. Plenty more spice on the body; woody herbs, peppercorns, biter orange peel, ripe fruits, dried fruits, firm woody bitterness with funky sweaty, horsey undertones. An unusual and complex beer. Not sure what to make of it exactly, but certainly begs another sip.

Christmas saison, tasted in the 2005 and 2010 versions. The 2010 version had an off-white, sticky head and misty yellowish blonde colour; strong banana aroma, mandarine liqueur, straw, orange peel, spices and flowers; and a sweet fruity taste (apple, banana), flowery, soft, lots of citrus freshness and a refined Hallertau finish with mild spicy notes. The 2005 version, on the other hand, was a lot darker, coppery to almost bronze with a light beige head, more ’regular’ fruity esters in the nose, a sourish Brett hint and a more malty and more sourish taste - a totally different beer in all aspects, so I don’t understand why all vintages are grouped together under one single entry here. I’ll rate the 2010 version here because it is more recent but I would rather be able to rate every vintage separately!

Bottle shared with Ben and Tom. Hazy brown colour, beige foam. Soft carbonation. Complex aroma of port, spices and dark fruit. Some roastiness with a sour touch. Well balanced and complex beer. Good drinkable. Very good.

25.4oz at 50° on 12/26/11

Pours an increasingly hazed somewhat desaturated dark amber, medium delicate off white head with decent duration

Nose is spicy, sour and slightly sweet. A range of fruits and fruit juice are balanced and somewhat muted by the added spices. Taste follows nicely on a somewhat thick, creamy, smooth body with solid carbonation. Sourness and spice resonate.

750 ml bottle. Pours a dark orange amber colour with a white firm head. Aroma of orange, some chocolate, dried fruits and some spices. Flavour of chocolate, green apple tartness, grass, caramel sweetness, plums, a bit of funk and wood. Full bodied and thick mouthfeel with soft carbonation. Alcohol is there, but very well hidden. Like a Belgian Strong Ale + Saison hybrid. Rich and complex. Elegant as well.

Winter spice notes, rich sweetness, hints of forest...and yet it’s still got that Fantome yeast tartness, really interesting beer. Very very good.

750mL bottle. Clove and cardamom in the nose. Flavor is refreshingly tart actually, with some lingering spiciness in finish. ---Rated via Beer Buddy for iPhone
