UPDATED: MAR 2, 2009 Original rating: Opaque russet colour; nose of alcohol, plums, raisins, spice (paprika, white pepper), dried apricot, sandalwood; flavour is wonderfully barnyardy, with raisins, rodenbachish tannins, and an acidic finish. More recent samples have been less compelling, with reduced complexity and structural weaknesses. My rating has been downgraded to reflect this.

Body: creamy body,
Flavor: rich malt flavor, lots of dark fruit, dark caramel sweetness slowly grows to enrichen the fruityness, plenty of spices, nice cinamon, light bitterness along with the spices, breadyness gives it that spicecake character from the aroma, no mustyness, yeast shot makes it much breadier and works very well with the spices,

Very dark ruby, almost opaque. Good brown head. Aroma is earthy with light spices and "Fantome cardboard aroma". Earthy lambic-like flavor. Chocolaty with some coriander and cardboard (!) notes. Hides alcohol very well. Slight sour and dry palate. Maybe not the most enjoyable brew but certainly very interesting and complex.

5th June 2009 Cloudy chocolate coloured beer. Dry crisp palate. Mildly sour with a faint chocolate note. A sweetish fruity tone in the mid. Finishes dry and bitter spicy. Not that well joined up. A bit odd!

Pours a deep red with a frothy off white head that disappears quickly. Aroma is dry, biscuity, coriander, cinnamon, pine, heather, apple, Belgian sugars. Relatively high carbonation. Flavour is dry and crisp with light smokiness, caramel and lots of flowery hops. The spices take over and are stunningly balanced, lots of cinnamon and coriander, nutmeg and heather. Then a heavy peppery yeast finish kicks in. A seriously wonderful brew.
