Deep ruby colour. Medium sized head that sinks rather quickly. Subtle liquorice aroma. Soft toffee on the palate. Roasty, almost smoked flavour. Rich, warming, somewhat salty finish.

kind of a cloudy brownish mahogony color w/ some slow rising visable carbonation and a huge frothy tan head. Smell is a nice bread hints of brown sugar some good spices peppers and corriander, along w/ some yeast notes. Pal is well coated lightly spiced. Flavor is lightly spiced definatelly some all spice and clove, bread dough and a nice full sweetness along w/ some lightly floral hop. Odd flavor in a saison but pretty good.

75cl cork/cap traded bottle. My first Fantome! Pours a rather mysterious red and hazy brownish-orange color with no real head. Big funky aroma that reminds me of fresh cantaloupe but also a touch of sour that makes your mouth water. Pretty dry, still carries the sour with a quick finish. Just a touch of the malt and caramel but really don’t notice the 10 ABV. Taste does not bowl you over like I expected from the aroma. Definitely an inventive saison.

Bottle from secret santa ’09 enjoyed during the super bowl. Pours a muddy, leathery brown. A finger of creamy mocha head. The nose is pert and floral, spicey, earthy, and a touch of bread. Lively. The taste is more of a chocolate malt, piney, spicey, and light yeast. Earthy and dry, but still sweet (without being sweet, really...) Overall very lively and full of personality. Very nice.

Deep blood-orange in colour, very large and long lasting beige coloured head, excellent thick lacing. The aroma initially starts off quite yeasty, rather sweet, some spice and pepper, moderate chocolate. The flavour is of oranges and very light grapefruit, yeasty, lots of spice, chocolate and dark malts, some sourness, earthy. Moderatly bitter mouthfeel, medium body, high carbonation. Finishes long, gassy, good amount of citrus and yeast. No alcohol is noticed throughout this beer, wonderfully complex. This is holding up extremely well.

Pours like a coke with no head and some limited effervescence. Hazy. Fresh sour cherries/grape/woody aroma with some noble hops and a little bit of raisin/oxidized character. Musty dry with cherry/grape notes and a terrific sourness that ends surprisingly clean. Not too complex and perfectly balanced between bitter, sweet, and sour. Light body with a little mouth puckering sourness. Hard to believe this is 10% abv.

2009 bottle from Bruisin’ Ales in Asheville. Pours chestnut brown; hazy and hazier as the pour gets down to the bottom. Nose shows chocolate malt, earth (dirt), sweat from a 2-year-old’s head after a nap (I got one, I should know), and pepper. Hints at acetic notes. Taste is also more sour and woody/earthy than expected. Herby, but nothing distinct making itself known. A good deal of peppery spice. A bit thin on the first half of the pour, but better as the settled goods enter the glass. Started loving this right around the last 4 oz of the glass.
