COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

Aroma like funky Christmas cookies. Flavor is super elegant. Subtle spices and a light tartness. Fantome again defies all expectations and makes a truly unique beer.

Pours dark brownish with a very short lived head. Smell is tart and herbacious. Taste is miny with rosemary and is dry and unique. Interesting but not a repeat drinker for me.

Murky copper/brown with a large white head. Malty, sweet, fruity and tart. Notes of caramel malt and spices along with a touch of pleasant funk.

Thanks to Wohlfs for the sample. Pours ruby brown with little head. Strong grape aroma. Flavor is everywhere with grape being dominant. Also had a woody sour yeast flavor to it. Very nice overall.

Bottle. Pours a nice enough coppery brown with a medium-sized head of dense foam. Aromas are surprising to me... I guess I wasn’t expecting a bit of a bananas, cloves and candi sugar mix, but there it is. There’s a little bit of a funk in there, too, but it’s pretty subdued. Flavor is very nice, but again, it’s far sweeter and way less funky than anticipated. Lots of sweet and fruity malt with a little spice and a little barnyard funk. Good, but different from expectations.

A lot going on here. Rich mahogany pour. Great, complicated aromas...yeasty sourness, and roasted malt. Chocolate, coffee, and that odd sourness intertwined. Holiday spicing pretty prominent...molasses, brown sugar, honey, and a BIG alcohol burn.

(Vintage 2003) - Murky brown with hints of red. The head is tan and rocky. Fairly strong dark fruit (fruit cake?) aroma. Flavor is sour fruit with some sweetness. Body is medium-full and dry. Pretty nice overall.
