COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

Bottle (cork labeled 086/477044, if that means anything...probably the phone number and not a bottle number). Pours with a murky hazy brown body and a foamy off-white head. Sourness one can smell from across the room. Aroma of sour, cork, mold, black pepper nostril burn, earth, orange peel, chocolate, flowers and tapioca. Taste is sour, floral, with a slightly metallic finish with buttery chocolate and a lingering pepper finish. That first sip is the worst, but I am not liking the after taste from this bottle. Garbage, grease, pepper, raw cocoa nibs. A bit too spicy too. Wish I liked it more, but I can’t stand the aftertaste, even after a few sips. Small, tingly bubbles. Dry mouthfeel.

750ml bottle, vintage unknown, but most likely 2006. Brown and purple hued body, with a small film of an off-white head. Oxidized nose of cardboard, sweet plum and wood, and a flavor that it up front sweet and starchy, then turning sour and lactic when the Fantome yeast is noticed... overall it’s a bit confused and detached, feeling thin in the mouth, weak and watery on the palate, never coming togethor with that rich frothiness that you find in other Fantome. Sharp, astringent at times, and cloying, it’s too messy. The finish especially is hard to deal with - the moldy cardboard and biting yeast.

UPDATED: JUN 23, 2009 Note - this bottle was fucked. I’ve had it before, it was my first Fantome, and was fantastic. This bottle was just a mess.

Dark brown, no head, though the bottle did open with a pop. Very watery, certainly not 10%, something’s definitely wrong. Sour aroma and palate.

Cloudy chocolate coloured beer. Dry crisp palate. Mildly sour with a faint chocolate note. A sweetish fruity tone in the mid. Finishes dry and bitter spicy. Not that well joined up. A bit odd!

reasonable saison. Pepper, sour dark. Creamy medium plus mouthfeel. Barnyard smell, but not the most barnyard of all the Fantome I have tried. Fresh from Belgium.

1 pint, 9.4 fl oz bottle from www.belgianshop.com. Pours a very rich brown mahagony and maple hue with a small frothy tan head, kind of creamy. Sour fruit (berries) and lightly smoked caramel malt aroma, earthy and barn yeast notes round out the nose. Sweet wheaty yeast (dough) flavor, light chocolate notes, malt and lightly smoked, oak and cellared, earthy flavors with a light bitter and acidic finish, berry notes. Medium to full bodied, spicy and fizzy palate. Darker than the other saisons I’ve had, but a very good brew, pairs well with steak.

Big thanks to beeryum for this one. Pours turbid ruby/magenta with medium, off-white head. Aroma of malt, dark fruit, hops, cabernet, chocolate....prize winning aroma! Tastes malty, spicy, with some citrus, merlot, cinnamon, chocolate, and a complex, dense finish. Outstanding!
