4.2 AROMA 8/10 APPEARANCE 4/5 TASTE 9/10 PALATE 4/5 OVERALL 17/20 duff (5483) - St, Margarets, Greater London, ENGLAND - JUL 30, 2002
Pretty interesting brew (like their others), herbal, spicy, malty nose. Murky brown colour, with a nice fluffy head and good lace. Very nice palate, slight hint of sweetness at the start, fading into a acidic, bitter/sour finish. Hints of cinamon spice at the start, and a fruity, almost tart cherry finish, quite strange, but surprisingly addictive, you wouldn’t know it had 10% alcohol in it.
4.5 AROMA 10/10 APPEARANCE 5/5 TASTE 9/10 PALATE 3/5 OVERALL 18/20 BückDich (5467) - McCall, Idaho, USA - FEB 16, 2004
Dark hazy brown color with lots of whit head and lacing that stays for a long time, lots of carbonation. The aroma has a lot of caramel and toffee with some sweet maple and nice belgian qualities to it. The flavor is very semi-sweet with a touch of alcohol and sweet fruit/fig/raisin/brown sugar; delcious. The finish is moderate and average with a bit of alcohol. This was a great BSA, I was thinking more like a dark saison, but it's tasty and delicious.

750 ml bottle. Very dark maroon with a three bubble head that settles to a tiny edge. Aroma of cinnamon, grassy herbs and cocoa. Taste of butterscotch, toffee, bitter chocolate and prunes, sourness enters at the half way point. Nicely complex and interesting, but a weird combination of spices.

3.9 AROMA 8/10 APPEARANCE 4/5 TASTE 8/10 PALATE 3/5 OVERALL 16/20 Cornfield (5277) - Oak Forest, Illinois, USA - OCT 24, 2005
Dark nutty brown with a HUGE creamy tan head, the nose presents a whirlwind of spicy scents atop a sweet caramel base. Raisins and chocolate blend with pepper, coriander, clove, a hint of mint, and the gods know what else Fantome threw into this Saison. This softly creamy drink has flavors to match the aroma with perhaps some pine and nuts and a definite alcohol zing to boot. It finishes on a spicy but slightly soured note. Very, very good drink.

3.6 AROMA 7/10 APPEARANCE 4/5 TASTE 7/10 PALATE 4/5 OVERALL 14/20 Ernest (5185) - Boulder, Colorado, USA - JAN 26, 2003
UPDATED: DEC 25, 2008 2008 batch. Head is initially average sized, frothy, light brown, mostly lasting. Body is hazy medium amber, bottle conditioned. Aroma is lightly malty (cookie, toasted grain), lightly hoppy (herbs), with light notes of cinnamon/nutmeg, orange peel, clove. Flavor is moderately sweet, lightly acidic, lightly bitter. Finish is lightly sweet, lightly acidic, lightly to moderately bitter. Medium to full body, velvety texture, lively carbonation. A restrained but pleasant batch. I haven’t had a great sample of this one in a couple of years, so figured it was time to re-rate.

3 AROMA 6/10 APPEARANCE 4/5 TASTE 6/10 PALATE 2/5 OVERALL 12/20 Hildigöltur (5107) - København, DENMARK - NOV 5, 2003

4.3 AROMA 9/10 APPEARANCE 3/5 TASTE 9/10 PALATE 4/5 OVERALL 18/20 Dickinsonbeer (5075) - Hoboken, New Jersey, USA - MAR 13, 2005
750 ml. Very dark murky brown with a huge soft beige head which lasts for a long time. Second and third pours become murkier and more opague brown. Aroma of fruits like plum, ripe apple, raisins, and cherry, along with some spicy notes and lots of bready and wild yeast hints. Flavor is powerfully sweet balanced with a mild bitterness in the end. Good dark crystal malts back up all the crazy belgian fruity flavors. Slightly tart, and acidic but this is balanced well with some of the malt sweetness. Delicately smooth finish with almost no trace of alcohol. This one definately knocked me on my ass, but it also restored my faith in Fantome after getting burned a few times with infected, sour, and flat beers.
