COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

The color was black. The head was creamy, light biege, and thin. The aroma was earthy, pepper, and caramel malt. The flavor earthy, sour, tart, and peppery. The alcohol is maxed very well. The palate was very carbonated. The finish was long lasting.

UPDATED: JAN 9, 2012 Update, draft @ Fantôme 07/01/2012. Aspect fruité noir allant vers la prune, palais épicé avec une pointe poivrée, malt léger avec un relent d’orange et épice, carbonation est modérée sans être trop présente avec une pointe coriandre et muscade. Levure toujours présente sans pour cela être trop en avant. courtesy of kiefdog pours dark amber with tan head. aroma and taste have plenty of sourness mixed with dark fruits, some malts in background and spices. Finish was rather weak and could not see the 10 abv in this beer.

Bottle. Pours blood orange coloured with a beige head. Light tart aroma. Taste of lots of strawberries and some sweet oranges. Smooth and the alcohol is well hidden.

Bottle @ Bull & Bush Christmas beer tasting. Slightly cloudy orange appearance with an off white head. Funky, mildly spicy, bready, barnyard aroma. Somewhat tangy, moderately tart, fruity, citrusy, light barnyard flavor. Nice beer.

Pour out of bottle is hazy orange with slightly off white head, aroma has notes of caramel, lemony tart, some pine, spice, slight fruity and funky notes in there as well. Taste is just as all over the place, the caramel and toffee sweetness, hints of lactic and lemony tart, slight pine and spice notes, touch of sweet dark fruit and funky earth and barnyard finish it out.

A wonderfully delicious winter (x-mas) saison. A: Mahogany colored body beneath a fluffy offwhite head... good retention and nice lacing left on the glass. S: While the citric, wheaty, grassy notes typical to saisons are gone here. The ripe dark fruits, cola and caramel are a nice substitute. The characteristic earthy funk is present and reminds you what this is... a lovely dark saison. T: Mirroring the nose in intricate fashion, this brew alternates between the sweet and the tang. The sweetness of the cola and caramel are well balanced by the funk. The dark fruits acting as the bridge... Pleasantly spiced without over stimulating the tongue. M: Moderate in body... a little heavier than I’d prefer. D: Delicious, if not overly dense (in body and flavor) to make this one a multiple sipper. However, I hope to find this next winter when it returns.

UPDATED: NOV 13, 2011 750 ml bottle. Pours a murky orange-brown with a large cream-colored head with great retention. Aroma is Brett-forward; very funky. No skunk! Nice. I was worried when I saw the green bottle. Taste is sweet and sour with a dry bitter finish. There’s a clover honey flavor in here. Very tasty. Carbonation is medium-high. Interesting. Good, although the second glass deteriorated, bringing the total down from a 4.1 to a 3.8.

Pours a dark cloudy tea color with an orange hue. The pillowy white head slowly disipates to a thin layer that rings the glass. Spicy fruit aroma with a hint of alcohol and barnyard characteristics. The flavor is complex with roasted malt, spruce, dried fruit, and pepper notes. There is a slight sourness towards the end. The finish is dry. Other than the slight alcohol aroma the 10% abv is well hidden. Very impressive offering. Happy New Year!!!
