COMMERCIAL DESCRIPTION
A very dark and entirely unique holiday seasonal beer, at a whopping 10% alc. by volume. Reportedly spiced with honey, caramel, coriander, black pepper, and other secret ingredients. The alcohol content probably goes a long way toward explaining that very warm and satisfied feeling one finds on the very first sip. A rich, dark-flavored beer with lots of deep-roasted chocolate malt, but still fairly dry, with a hint of sourness at the core. It is very spicy, with some winter spruce flavor in the bargain. The wild yeast sourness also adds to its welcoming character.

Much darker than other Fantomes and slightly fizzier, too. Could this bottle be going bad? Noticeable tartness and sort of a one-dimensional taste that's devoid of spice and resembles a lambic. Disappointing.

Brown color with red notes. Aroma of too old beer (plums in Madeira, raisins). Alcohol totally hidden. Likely to an ordinairy bruin. Lack of flavor and intensity. Flavor kind of disappears in the mouth. Quite disappointing.

Pours a very clouded dark brown. Nice light head on it. Smells of spices - very earthy. Tastes very tart, and I felt that took away from the rest of the palate since it was overpowering. I wasn’t expecting that, and it made it hard to drink. I didn’t finish the bomber. Gave it a higher overall score because it didn’t drink like it was 10%, but the palate made it hard to pick up the glass again.

UPDATED: MAR 25, 2007 The aroma is spicy with pepper, cedar wood and yeast. The appearance is brown with a three finger tan head. The flavor has toasted malt, yeast, charred wood (smoke), and bitterness. It is only slightly sweet. The palate is somewhat thin but OK. The beer is unique but still not one of my favorites.

This capped and corked bottle had a cork marked 0B5/477044. It poured a large sized head of frothy light brown colored fine to large sized mostly lasting bubbles that left behind a hazy carbonated brown colored body with a lot of suspended carbonation in it as if the bubbles were drifting up through molasses. It had a musty fruity sour lambic like aroma mixed with a few mild brown notes. The mouth feel was tingly from start to finish mildly vinous mildly sour and ended with a thin flavor that was mild and off in a strange manner.

Cobra (1079) - In a van, down by the river, Maryland, USA - MAR 3, 2005
750 ml. green bottle. Corked & crowned. Poured out a deep hazy chocolate/ cocoa brown, with a thin light brown head. Aromas are mostly of musty barns, horse blanket, and some sour malts. Flavors are mostly of Brettanomyces at this point, sour, tart, and astringent. Puckering even. Not too much left in the way of spices, honey, or pepper. Slight peppery bite to it as it’s swallowed. Alcohol is well hidden, tastes more like a 5% ABV sour red Belgian than a 10% dark ale. Finishes sour, tart, and vinegary.

"Murky brown color, slight orange hues. Rather large head for 10% ABV, great lacing too. Aroma was of strong cloves, other fruits, other spices and pine, vinegar, almost a flemish sour aroma. The flavor was spice overload, cloves most notable, cinnamon, nutmeg, even roses. Alcohol was not bad for this level, hid well. Some slight sour aspects to the aftertaste. Mouthfeel was slightly acidic. The spicing was way too overdone, leaving this one in disappiontment."

Piscator was right. This beer was definitely too wild for my liking. Although I missed the "wet hay" flavour. How does he know what "wet hay" tastes like anyway?

UPDATED: MAY 15, 2007 bottle from Knightly Spirits in Orlando - I have a hard time getting past the barnyard taste - though its fun looking at my wifes face when she samples - sour, many many spices I cannot detect, most interesting brew i’ve had so far - I have a few more Fantomes on hand - though I must say very hard to finish! I’m not ready for this one.....................
