Fantome's winter offering, available December through March or so. Brewer Dany Prignon changes his receipes every year, so we can't so for sure what this year's beer will be like, but it is sure to please lovers of Dany's beers.

pours amber with a thin head, light carbonation. smells of hay and musk, wood, and peat, smoke. taste is slightly medicinal and starts to become a bit overbearing as the glass warms. palate is medium. Not my favorite fantome.

750mL pours hazy gold with a thin off white head of foam. The aroma is earthy gravel, band-aid, peat and a pleasing herbal like note that keeps this interesting. The taste is similar as I’m getting funky Barbie Doll peat notes, dry earthy gravel and that same herbal goodness amid a couple of hand fulls of hay.

Pours cloudy golden with a huge, thick, glorious light tan head that resembles milk froth in structure. Nose is smoked mushrooms, pepper, dust. Maybe some grains of paradise? A little sweetness early is overwhelmed by a bitter, spicy backbone. Makes the mouth burn and tingle a bit. Chalkiness in the mouthfeel. Medium body. Would do well up against a stiltson or some truffle fries. Brilliant, but reminds me of Radiohead’s "In Rainbows", not immediately accessible.

Pours a standard thin looking clear straw color until you pour the dregs in, them it gets real cloudy. Aromas of lemon, light spices in the nose. Taste is similar - lemon zest, some white pepper. Not exactly mind blowing but decent.

Thanks to the kind soul who brought this to the Tampa weekly tasting. Pours a hazy yellow with a white head. Nose is funk, pepper, sweet citrus, and some sweet malt with herbs, and yeast. Flavor is similar with funk, pepper, yeast, sweet malt, and sweet citrus. Light to medium in body and a nice saison overall.

Poured from the corked bottle. This is 2011. Aroma is grainy and light. Flavor is not as great as I thought. Very grainy and earthy. Overall it has a bubbly head and decent lacing. Nothing special here, and not quite what I expect for saison.
