| 3.8 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 3/5 | 8/10 | 4/5 | 16/20 | Jan 4, 2006 Deep blush in color. Stable creamy thin head. Spicy, lightly hoppy aroma with some hints of cheese. Very subtle but complex layers of flavors, like most of the Fantome beers. Tart, herbal, has some fruit. Great body, clean finish. Excellent. brentfeesh (1038), Gadsden, Alabama, USA
| 3.4 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 4/5 | 6/10 | 4/5 | 13/20 | Jan 3, 2006 Voice recorder notes on New years. No way to ID date of bottle. Pours a hazy orange amber with a nice light white head. Looks good. Aroma has sour fruit, tart berries (cherries). Not bad. Body is slick and medium. Interesting flavor, not my favorite, but not too bad. Hints of bret. Sour fruit, lost of spices (pepper for one, and there were others though they were hard to pull out). Nobel hops (bitter hop finish…spicy). A good beverage but I’ll stick with the noel. Silphium (2137), Haslett, Michigan, USA
| 3.5 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 4/5 | 7/10 | 3/5 | 14/20 | Dec 23, 2005 Hazy orange body, lots of yeast particles. Medium loose beige head. Flowery aroma, with nectar, yeast spiciness (pepper and Apiaceous [caraway?] notes), and apple cider. Big, estery. Slightly tart appley body, heavy on the esters, chalky and peppery, with flower petals, herbs, and a touch of brown sugar. Clove makes an appearance, though this was subtle. Overall on the bitter side, especially in the finish. Not bad. badnewsbeers (1026), Grand Rapids, Michigan, USA

| 3.7 | Aroma | Appearance | Flavor | Palate | Overall | | 8/10 | 4/5 | 8/10 | 3/5 | 14/20 | Dec 20, 2005 Sampled at a 2005 Christmas and Winter beer tasting at Delilah’s, Chicago, IL. 1998 vintage. Fresh bottle opened. Hazy orange hued ale having a long-lasting white head with good lacing. No discernable carbonation. Sour fruity aroma. Medium bodied that starts dry with spicy, sour, light sweet malt, and fruity flavors. Finishes dry with light sour aftertaste. Nice sour drinkable winter brew, though it is an acquired taste for some. Mangino (1027), Mississippi, USA

Aroma is sour and funky, apple vinegar and oatmeal. Flavor is powerfullly sour, lots of blended muddled flavors. Thinks this one might be past its prime. Will have to re-rate soon. | 3.3 | Aroma | Appearance | Flavor | Palate | Overall | | 7/10 | 4/5 | 6/10 | 3/5 | 13/20 | Dec 19, 2005 Bottle @ Kerstbierfestival Essen. Fruity aroma of orange(peel), slightly sour as well. Pretty sour taste, almost gueuze-like. Fruity and spicey. Finish seems a bit off. Strange brew, I was actually quite disappointed. diabel (1369), Aarschot, Belgium
| 3.4 | Aroma | Appearance | Flavor | Palate | Overall | | 6/10 | 4/5 | 7/10 | 4/5 | 13/20 | Dec 18, 2005 Bottle at Kerstbierenfestival 2005, Essen, Belgium Hazy, amber body. Good lace. Fizzy, light brown head. Aroma of grain. Moderately acidic, lightly bitter initial flavour. Lightly acidic, lightly bitter finish, which lasts very long. I find it a weird Christmas beer. I wouldn’t call it a Saison, iI’s rather a mixture between a flemish sour ale and a strong sweet Christmas beer. And it’s not that mixtures of two lovely things are necessarily still lovely. Certainly not the best creation of Danny P. But hey, we love Danny so we can check out every time whether his new brews turn out to be fantastic or not.
