Commercial Description:
Fantome's winter offering, available December through March or so. Brewer Dany Prignon changes his receipes every year, so we can't so for sure what this year's beer will be like, but it is sure to please lovers of Dany's beers.

Cloudy, medium amber w/ generous, foamy, light beige head. Nice lace. Aroma is flowery, fruity, spicy, & sweet w/ a light effervescent tartness. Light, highly carbonated feel. Sweet, malty flavour w/ peppery, grassy finish.

Yeasty aroma along with some nice funk, cherry/grape, and some spice that I cannot quite put my finger on. Nice complex flavor of the funk, yeast, fruit, spice, and even a touch of hoppy bitterness. Medium bodied, pretty dry, very light alcohol. Not incredibly big in stature but carries a nice subtle complexity that makes it quite a nice beer.

Thanks to whoever brought this to the Toronto Christmas Party ’04. Sour oakey nose - grape skin. Astringent, lemon, cherry pits, yeast. Great bitterness.

Unknown vintage. Hazy amber body with a moderate fluffy white head, and some nice lacing. Mildly sour aroma is a bit muted. Flavour starts out mildly sour with some nice maltyness and some vague yeasty spice. Finish has a mild lingering sourness. Palate is a bit light but nice. Surprisingly little here, not sure if its the beer or a bit of palate fatigue, but I expect more complexity from a Fantome than I found here. Toronto Christmas Party 2004.

Poured cloudy dark brown with a rocky, quickly disappating head. Big funky aroma of sour cherry, oak, and spice. Flavor was also funky with yeast and spice dominating, with hint of sour fruit in the background. Very carbonated, but not overwhelmingly so. If Fantome makes a bad beer, I haven’t found it yet.

(750ml bottle) Pours a dark brown body with a huge rocky beige head. Aroma of raisins, plum, brown sugar, sweet malt, and yeast. Flavor of yeast, dark fruits, and spices.

Bottled: Murky looking beer. Reminds me of sludge. Cinnamon is dominating the aroma and flavour. Has some delicious rubber notes. I hope this beer is infected, otherwise this is one of the most shitty beers I’ve ever had.. Definately has to try another beer, but this rating will stand till then.

98 Bottle. Woodsy and alcohol aroma. Lots of crazy things going on in my nose. Very sour and tart. The spices must have mutated quite a bit over four years. I liked this one quite a bit.
