COMMERCIAL DESCRIPTION
Fantome's winter offering, available December through March or so. Brewer Dany Prignon changes his receipes every year, so we can't so for sure what this year's beer will be like, but it is sure to please lovers of Dany's beers.

pours amber with a thin head, light carbonation. smells of hay and musk, wood, and peat, smoke. taste is slightly medicinal and starts to become a bit overbearing as the glass warms. palate is medium. Not my favorite fantome.

Bottle. Lovely clear deep amber with a beige head. A fair bit of sediment is left in the bottle. Reserved aroma of sticky bread crusts, spiced dough. Much more assertive to taste but with much the same features. Some stewed fruit as well as sticky dough. Firm bitterness with lots of spices at the end. Before that mostly sweet with only a hint of tartness. Wasn’t in the fridge but opened up more and more in the glass, with spices softening and more flavours (sour plums, dried banana, baked quinces, licorice) emerging. After a while there’s a little warmth from the alcohol. Another interesting but entirely well-mannered beer from Fantôme - times change it seems.

750mL bottle in an IPA glass. Light brown orange color with creamy head. Fruity and spicy aroma with a nice yeasty backbone. Big flavours of dark fruit, clove and pepper. Relatively sweet and slightly cloying. Full bodied. Interesting beer with a nice depth.

Pours clear golden with a off-white head. Aroma has notes of malt, floral, herbal, caramel, yeast and pepper. Taste is medium sweet and light bitter with a long malty, floral and peppber finish. Body is medium, texture is oily, carbonation is soft.

2015 bottle. Although this is billed as a saison, it is basically a Biere de Garde -- it’s malty, a little syrupy, and tastes a bit spiced, almost like a sweet raisin bread. A lot sweeter than most saisons, but it completely works.

Deep chestnut with a faint haze, thin off white head and gentle condition. Spicy nose with some trace funky sub-lambic notes. Tangy fruit, malt and slight spiciness in the mouth though some funkiness still remains. Dry and spicy bitterness in the finish with some lingering nuttiness.

butelka, nie wiem z ktorego roku, ale wazny do konca 2016, lot bj 13 (z 2013?), jasne, nieco mene piwo z taka sobie piana. aroaty to glownie jasne owoce (mirabelki? winogrona?), duzo przyprawowosci, a la pieprz, kardamon, galka muszkatulowa.czuc ciut nieco aptecznego funku chyba w tle. w ustach rzesko, podobnie do aromatu, bardzo intensywnie, wyraznie kwaskowato i dosc wytrawnie. sumarycznie daje to niezwykle unikalne piwo, bardzo charakterystyczne, zupelnie inne od wiekszosci "swiatecznych"". klasa

Bottle, 75cl. An unclear dark golden beer with a dense finger thick off-white head. Herbal typical Fantome aroma with some caramel hints, dried fruits and a generic fruityness. Floral. It’s full bodied, dry and with a nice carbonation level. Herbal flavor with a hint of black pepper. Fruityness and some spring onion notes. Almost meaty. Lasting herbal and fruity finish. Refreshing indeed. Too malty I think though. 160521

750 ml bottle into tulip glass; lot bj13, best before end 2016. Pours fairly crystal clear orange/copper color with 2 finger dense and fluffy off white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a fair amount of streaming carbonation. Aromas of peach, apricot, pear, apple, lemon, orange, berry, pepper, clove, coriander, lavender, hibiscus, light banana, brown sugar, toasted bread, hay, straw, grass, light musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/earthy yeast, spices, and moderate bready malt notes; with good strength. Taste of peach, apricot, pear, apple, lemon, orange, berry, pepper, clove, coriander, lavender, hibiscus, light banana, brown sugar, toasted bread, hay, straw, grass, light musty funk, and yeast earthiness. Moderate herbal bitterness, yeast spiciness, and light fruity tartness on the finish; with lingering notes of peach, apricot, pear, apple, lemon, orange, berry, pepper, clove, coriander, lavender, hibiscus, toasted bread, hay, straw, grass, and yeast earthiness on the finish for a good bit. Damn nice complexity, robustness, and balance of fruity/earthy yeast, spices, and moderate bready malt flavors; with a great malt/bitter/tart/spiciness balance and zero astringent flavors after the finish. Light-moderate dryness from bitter/tart/spiciness, increasing through the glass. Medium carbonation and body; with a very smooth, fairly sticky, and lightly grainy/creamy balanced mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a great saison. All around great complexity, robustness, and balance of fruity/earthy yeast, spices, and moderate bready malt flavors; and very smooth and easy to drink. A very enjoyable offering.
