Hazy auburn/brown in color with a thin tan head. Aromas of cinnamon, nutmeg and brown sugar. Flavors touching on cinnamon, bread, grapefruit with a peppery bitterness. Yeast pour really thickens the body and calms the peppery bitterness. The appearance is not typical of a saison. A very special beer indeed!

A really good saison, a lot like a Dupont but less spiciness to it, which isn’t always a bad thing.

Bottle. Opens with quite a pop and is in danger of gushing. Pours golden with a large white head. Aroma is interesting to say the least, with some spices, a little tartness, and...menthol? Definitely felt that cooling sensation in the back of my throat when I sniffed this one. Taste is quite earthy, with more spiciness coming out. I wish I could pick out individual flavors, but they just weren’t coming to me. Plenty of yeastiness here as well, go figure. Pretty light on the palate and somewhat dry in the finish.

Poured out of 750 mL bottle, bought at Hi-Times Wine Cellars in Costa Mesa, CA 10/21/03. 2003 vintage?? Hazy, tannish golden brown color with tight, yellowish head that dissipates dissappointingly quickly. Average lacing but nice looking silkiness in the pour. Aroma is moderate, very bright, slightly oaky and cork-ish, spicy and glowing, and very malty. Taste is immediately of mellowed metallic copper, slightly tingling carbonation, with light bitter hops beneath, and a special spice and spiciness I don't recognize. Very smooth in mouth. Taste evolves to much more robust and rounded caramelized malt and dirty, bitter hops, with a little golden Belgian glow unlike any other beer I've had-- almost makes the tongue burn like some kind of a hot sauce has touched it. Even some smokiness to the aftertaste also. Very unusual, and still quite nice. Each new sip reveals new wrinkles to the complex, subtle, and delicate bouquet of flavors. This is one to be savored. Very delicious stuff.

Poured from a 750ml corked and capped bottle into a tulip glass. No best before date marked on label.
Appearance: Pours a hazy honey gold with yellow-orange highlights and a huge 4 finger foamy snow white head. Little flecks of sediment floating around Nice head retention and lacing..
Smell: Traditional saison aroma featuring lemon, florals, spices, funk and a touch of riesling sweetness.
Taste: Funky notes and Belgian yeast up front followed by spices and floral sweetness in the middle before ending with bitter citrus, grasses and additional spices at the finish. Aftertaste is quite dry and features a touch of lemongrass and a bitterness that is reminiscent of wine grape hulls. Very complex flavor.
Mouthfeel: Light-to-medium-bodied with a high amount of prickly carbonation. Goes down very smooth.
Drinkability: Good drinkability. You may want to share the bottle with a friend, but, if not, you’ll have not problem finishing it by yourself.
Overall: Excellent beer overall. This is my first Fantôme saison and I must say that this is the best saison I’ve ever had.I just wish they distributed down here in southwest Florida. If you have a chance to try this one, buy it. Highly recommended.

Huge tannish white head which goes slowly. Huge nose of vanilla. Taste is sour vanilla with slight mint and chocolate overtones. Very complex flavor (amongst the best) where a lambic meets a herb/spice/vegetable. Sour minty chocolate vanilla. Alcohol blend is exceptional. Bravo. Signature taste instantly recognizable and beautiful.

This would be the second time I have tasted this beer and I was really surprised how different it is from the first time. The most recent tasting (2/10/13) offered a smokey undertone to an ester laced full bodied beer. I enjoy a bit of smoke and peat. So im happy with it.

Poured brown with alot of floating yeast. A malty yet sour aroma. The flavor is of yeast and oak with a decent alcohol present.

Light brown. Lotsa funky particles. Not much of a head. Light belgian yeast aromas. Light crystal malt. Nice backing bitterness. Effervescent. Quite hoppy. I have to try this again when I can really focus on it.

beer pours a murky amber. very fizzy with a huge, fluffy head that quickly descends to form a thick lace. nose is huge and complex: clovey phenols, some spice (coriander?), fruity esters, and a little malt toast. nice balanced flavor: malt and spice notes up front with a finish balnced with some bitterness, a light acid tang, a good CO2 bight, and warming alcohol notes. great balance for its size. it goes down really easy, too. I really like this beer.
