COMMERCIAL DESCRIPTION
Fantome's winter offering, available December through March or so. Brewer Dany Prignon changes his receipes every year, so we can't so for sure what this year's beer will be like, but it is sure to please lovers of Dany's beers.

UPDATED: NOV 29, 2003 clouded orange fading to pink w/ a solid frothy lathering top..the aroma was very reminiscent of orval..the violet flowers blooming their subtle chocolate spicy citrus splendor ..and tiny traces of cookie dough...Jeff hit it on the head with the Juicy-Fruit gum, acid, mint leaves,other leaves, barnyard, lemon Meringue, suede..as you drink, the aroma changes..giving hints of vanilla and cream..this then seeks into the flavor..warping your mind..finishing flowery, soapy, powdery and completely insane!!! Semi-acidic in older samples as well. The new vintage is a completely different beer though..comments on that will come soon.

Bottle. Darkish gold-copper pour with white head. Aroma of classic fantôme saison yeast, bread dough, caramel, something particularly malty in here. Taste reveals more sweet malty flavors, no spice per se except for the yeasty finish, light barely detectable hoppiness. Palate is a little heavy, fantôme beers don’t usually show their 8% ABV but this one did to my taste, a little too much so. Lacked the regular saison drinkability and refreshing factor. Still very decent.

Bottle - Clear yellow pour with amber highlight and a big fluffy white head. Nose is dry and yeasty, with hay, a bit of bubblegum, and some menthol/herbal/pine resin notes. Taste is too sharp, with a boozy/pine note that lasts through the long finish. A bit of tropical fruity sweetness, a hint of cocoa, and some dusty yeast, but the sharpness is the dominant trait here that I just can’t get past. I think I really could have gotten into this one if not for that aspect.

Picked this up at Hunger Mountain Co-Op in Vermont. Stuck it in the fridge, poured into a Hill Farmstead Glass and enjoyed at 55 Degrees F. (Photos are from the pour I did for my GF)

A - 2-Finger Head, crystal clear. SRM of 8, dark golden brown. TONS of really creepy looking sediment in this beer. Lots of floaters / suspended things. Not sure what they are but oh-well.

S - Big garlic, peppers and mustard powder scent. Big spice profile followed by a fresh cut grass scent and some funky yeast. Bits of citrus.

T - Wow. Uber spicy this beer. Nice funky bitter / caramel taste. Bits of lemon (citrus) and grassy taste. The spice is nice but not preferred but just a personal preference.

M - 90/10 carbonation, lingering tart and lemon taste with a bit of coriander. Nice dry finish.

O - This is a decent beer. Not great but decent.

Pours hazy golden straw with fluffy off white head that barely settles. Lots of bubbly carbonation. Nose is grassy, lemon, barnyard funk. Taste is Belgian yeast, citrus, sweet esters, spice. Lighter bodied with a sour tartness and dry finish. Real solid yet not elite for Fantome ---Rated via Beer Buddy for iPhone

75 cl. bottle @ home / purchased @ Alvinne: A: looks like beer in ads, crystal clear, golden with a million bubbles rising & lambic like, whitest white head, ad beer slash champagne looking /// thick layer sediment in bottle, looks like chocolate milk / S: very tart, horse blanket, hay, coriander, lemon, lacto, geuze (?) yoghurt / T: bitter hay, yeast, lemon drops, coriander, yeast, bitter finish, lacto, oat, coriander, lemon, bitter finish, sake, booze, artificial lemon, air refresher, pepper, lots barnyard // lacto yoghurt finish / B: very light, fluffy, not what you would expect a winter beer to be, what you would expect Fantôme to make as a winter beer / neat, oddly fascinating, Fantôme-sque (possible vintage / who knows)

This looked like an older label. Came from Roof Bros in Paduka. Pours orange to amber and bubbles are large. Nose gives off various fruits and sweet and light caramel malts. Flavor is caramel malt sweetness then quickly gets medium dry and has a tart finish. Light carbonation. A drinkable beer but doesn’t really stand out as anything special.

bootle. notes of banana hammocks, pear shaped dudes, spicy sweet booty-breads, toasty jizm, light candied sugar balls. more of a belgian strong ale than a saison. okay, mediocre fantome. do better next time. not a "bon (h)iver"!!!!! hey to phaleslu and rapebeer!!!!!!!

Really nice unique brew. Pours a cloudy reddish gold with a tight foamy head that dissapates rather quickly. Aroma of musty citrus, green apple, and a bit of leathery sour funk and spice. The taste has a strong bite of white pepper that I didn’t pick up on the nose. The flavor also has a touch of banana and a slight tartness. There is also a caramel malt presence. The finish is dry but warming from the pepper and alcohol.

Bottle to my Duvel glass. Pours hazy dirty amber with a nice tight foamy head that rests to a spotty foamy film. Aroma is funky yeast leather and musty citrus. Taste is funky musty yeast and biscuit with lightly tart rotting fruit with a big spice pepper finish. Palate has a medium feel with plenty of carbonation a finishes dry.
