Cloudy orange pour with a huge, creamy, off white head that. Smells of funk, peat, mineral, Band-Aid, sweet, figgy dark fruits, stone fruit, hints of banana, floral honey and musty hay. Flavor is peat, iodine, mineral, musty hay, lots of Band-Aid, leather, fallen leaves, lots of interesting funky flavors, dug up tree roots, wet leather, old tobacco, musty old plants, then some spice, fig and honey sweetness to the finish along with lingering, Band-Aid, iodine, woody must and general earthy, musky funk. Medium body, creamy, syrupy and slick body, with a surprisingly bright, blanketing carbonation. Overall it’s a difficult beer to judge, there is just so much going on here, some good, some bad (huge Band-Aid presence), though I will have to give it a pretty positive score, huge complexity, hides it’s ABV% well, and c’mon, peat smoked Saison?!?!?

1 pt 9.4 fl oz bottle. Hazy orange amber colour, white foam head and aroma of light malt & grain, lemon-lime, citric rind, fruity, funk. Taste is tart, grainy, caramel, lemon rind, hay, woody, fruity cherry, barnyard and some spicy bitterness. Medium bodied, soft carbonation, dry tangy finish. Very drinkable.

Bottle. Pours slightly hazy orange with big white head. Aroma is funky and dirty. Taste is caramel, toffee, funk. Good.

Hazy medium orange-brown
Smells like a dirty bathroom, towel that needs to be washed, and raisins.
Slightly sour. Less bitter and sweet. Some of the dirty funk shows up in the taste, along with dates and coriander and a light maltiness.
Long bitter finish, full of clove.
Much easier to drink than the smell would lead you to believe. I like these kind of funky tastes, but this is near the top of what I like. It is good, though. Better the more you drink it.

Bottle 65 cl from Barleywine, CPH. Hazy orange with a thick beige head. Gooseberries, tartness, yeasty, malt, funky, lemon. Some chocolate?, berries, sweet cherries, sweet. Tastes colliding in a bad way. Medium body, medium carbonation, stränge finish.

tart gooseberry, citrusy, funky aroma eith hints of meat, mushrooms and soy. Tart taste, mushrooms in the taste as well. Caramelly malty taste. Don’t really care for the taste, and it is too powerful in taste and to full in body to be a good saison, a saison for me should be more refreshing

Large format bottle at Webster’s in Chicago. The aroma is oranges, lemongrass, oxidation, diacetyl. Murky amber in color. Tastes of chutney, spices, oxidized sherry, buttered roasted apples, caramel, wow the flavors keep developing as it warms. Tart and dry finish. Certainly an authentic farm house ale, but doesn’t really resemble the Anglo Saxon interpretation of a saison. Delicious none the less.

75cl bottle bbEnd2016, shared at Outre-Rhin tasting 05/2015. Ginger, wild orange marmelade, undomesticated citrus funk, something of cinnamon, curry and fermented pumpkin in aroma, mildly complex at various surfaces emerging as the beer warms. Dirty maltfunk milkshake of a citrusspiced concoction in taste: wild orange broth, grapefruit, made creamy by an unbridled Fantôme-dirty yeastiness, providing earthy spice on top of the actual additional, unlocateable spices. Not quite stellar, but transcendental in its ungraspable earthiness - Fantômes really are bog-dirty, farmyard-stained angels.

Couleur orangée trouble, légère mousse blanche. Nez de levures et vieilles agrumes, assez bon. Gout très fort sur l’agrumes, raisin, note levures et alcool brulé. Bière pour spécialistes.

Bottle 75cl kindly shared by Bartlebier. A cloudy golden beer, nose is on ripped fruits and grapefruit. Aroma is on ripped orange, grapefruit, quince, lot of yeast, astringency, alcohol notes, apple, lactic touch, unbalanced and heavy.

Most recent batch purchased at West Lakeview Liquors. Poured into a filled in ghost tulip. Hiver pours a murky orange brown in color with a half fingers worth of off-white head. The head dissipates rather quickly to a flat, somewhat boring appearance. Nose is comprised of yeast, spice, faint lemon, pepper, and is somewhat "green". The taste to me screams oregano. There is definitely some pepper as well, but the main theme is definitely oregano. Finishes with the typical young Fantome yeastiness seen in post infection bottles. Moderate mouthfeel, dull carbonation, a little watery, and a moderate finish. Not one of the best bottles of Hiver I’ve had, unfortunately this is the one I sat down the rate. Previous bottles have been almost flawless, this one just doesn’t sync up.
