Appearance: dirty oranges under a white head which fades into a stubborn thick blanket. Swirls with an even thicker blanket but no lace.
Nose: wow. Lightly funked in the back; herbs and leather. Sage. Grass. Kneaded dough damp and moist and yet to be baked. Dried flowers, stems and leaves included. Sour lemon drops; hold the sugar coating. Inner pith of key lime and lemon, dried. Musty.
Palate: soft mouthfeel with the funk lightly pervasive. Sour lemon drops pucker while pink grapefruit adds a touch of sweetness to citric tart nibblies and skin bitterness. Mustiness lingers underneath, flowing steadily through each quaff. Pithy dryness from start to finish. Herbal infusion of sage, rosemary, and dried flower petals and stems; lingers in breath. Despite funk and must, not too overly dry either. Leather also underneath. Yum
Final Thoughts: I haven’t been privileged to partake of too many Fantôme beers, but when I am there is an additional sense of reverence. Small, quaint, and eclectic, they are just one more reason Belgium rules my burgundian world.

Appearance: dark, cloudy brown-gold with millions of floaties in an almost gelid suspension, with a thick, fluffy near-white head that lasted forever, slowly shrinking to a thick cap and generous lace. Aroma: sweet honeyed cereal grain, light citrus, barnyard and slight plastic bandaid funk, with a strong dose of pepper and earth. Taste: slightly dank, with a ton of black peppery bite, a hint of citrus (grapefruit and blood orange), some herbal/bitter barnyard funk. Finish: loamy earth and peppery heat (like cayenne) linger prominently, over some funky sweetness. Notes: A very unusual saison. I can’t stress enough how peppery and earthy this thing was. The last dregs in my second tulip (which I enjoyed far more than the first) actually looked like it had cayenne in it (little red particles settling in the base). Very odd and different, but not bad. Glad I tried it. Beer #3 of Beerdvent 2013.

750ml bottle purchased in the winter of 2013 in a tulip. Pours hazy golden/amber with a lacy, off-white head. Aroma of spices, some light spice from the yeast, a little fruit, a good amount of pale and caramel malts, and a light dough/toffee note. Flavor the same with hints of tartness. Average texture. Decent but a little weird.

Schön hellbraun-trüb mit cremefarbenem Schaum. Im Antrunk ist das Bier schön vollmundig-malzig mit einem interessnten Kräuterton. Zum Hauptteil hin wird das Bier angenehm fruchtig (rote Früchte), zusammen mit einer interessant aäuerlich-frischen Note. Die Hefe mildert die leichte alkoholische Schärfe etwas ab, die würzigen Kräuteraromen fügen sich wunderbar ins Gesamtbild ein. Auf der Zunge bleibt eine malzig, angenehm herbe und kräuteraromatisch-würzige Note. --> Sehr schön rundes, kräuteraromatisches Bier! Toll! Vielen Dank an Kölschtrinker!

A second go at it. Vint 2013 (prolly)
This is murky and light amber with a solid quilt of toasted cream foam. Smells primarily of skunk and bandaids. Then some soil, hay, clay, shit and leather. Flavor is plastic, bandaid, bitter, well, quite frankly this beer is shit, and tastes like a tack store with manure to boot. Medium bodied with moderate carb and of dry. A really shitty beer.

Pours amber with diaphany and a solid white surface character. Nose with vanilla, sweet grain I get from most Fantome’s, and plenty of pepper and clay; also a surprsingly skunked character. Sweet flavor with the pepper tones and a sweet grainy character and some clay flavor. Full, over full body with not only a full body (poor for this style) and hi carb and a semi dry finish. Not that intriguing, not that great (at least for what the hunt requires in my life)

APPEARANCE: clouded dark blond beer, small unstable white head.
NOSE: herbs, "forest"-like, sweet, wood.
TASTE: very sweet, caramel, wood.
Decent in total, but nothing special.

750 ml bottle in the campgrounds after the 9th Belgian Brew Fest in Lovell, ME. Nose is fruity and lightly funky basement. Notes of floral hops and some type of citrus zest. The flavor is straight forward and the same as the aroma. Medium body and dry texture. Good balance of citrus and light funk. This brew was a nice surprise and refreshing.
