Fantome's winter offering, available December through March or so. Brewer Dany Prignon changes his receipes every year, so we can't so for sure what this year's beer will be like, but it is sure to please lovers of Dany's beers.

Yorker (1167) - Herning, DENMARK - AUG 25, 2014
Corked 75 cl bottle @ home. Pours hazy amber with some sediment and a white head that leaves a little lacing. Aroma and flavour are cinnamon, herbs, dried fruit, and yeast - with a dry finish.

Color anaranjado, espuma blanca muy muy densa que se disipa dejando una pequeña capita. Bastante cuerpo para ser una saison, densa y con sedimentos. Aroma ácido entre saison y lambic. Sabor increíblemente complejo, muy muy seca pero con un toque final ligeramente dulce, acidez moderada y ligeramente agria con final amargo que recuerda a las mejores triples belgas. Impresionante.

750mL capped & corked Champagne bottle BB end of 2016 Big fluffy foam dies down to a dense cap atop a hazy deep honey gold body. Spicy aroma, very complex; phenolic & woody clove, overly ripe pear & banana-like esters, fennel & coriander seed, hay & porrigey malts, touch of malt vinegar. Carbonation relatively subdued for style, as is the body, somewhat thick, slightly stodgy, more like a Belgian strong than a Saison, not to take anything away from it, plusthere’s still a tickle of acidity. Once again, it’s a complex mix on the body; bruised banana & apple, cider vinegar, whole cloves, bay leaf, white pepper, some minerality there, sherbert, grassy herbal hops. Bitterness reasonably pronounced, long finish, alcohol growing in warmth as I get through. Second beer from this brewery, and no less impressed that the first time - there’s something rustic & unique about them.

Alengrin (1296) - BELGIUM - AUG 15, 2014
The winter saison in this series, changing recipe each year so should be rated per vintage here; the vintage I tasted, had almonds added to it. Cloudy brownish amber colour, cream white head, complex yeasty and spicy aroma with caramel malts, almonds only faintly noticeable, fruity as usual for a Fantôme; bready and honeyish malts in the mouth with complex spicy accents and fresh fruitiness, faint chocolate note, sourish accent as usual. Very well-balanced and I urgently have to taste this anew.

UPDATED: AUG 15, 2014 Amazingly finding an off-menu draft of an aged version (2007?) of the Hiver at Monks Cafe in August 2014. Unusual light cloudy egg yolk pour with a lot of soapy soft white foam that left lace that thinned away. Browned white peaches. Nectarines. Nicely tart but the edges have softened so it is not harsh. A bit musty, but not overaged. Much of the caramel malt flavors have fuzzed away to far in the background. Noteworthy that each pour into the old keg got brighter, fuller and less cloudy. Wonderful juicy dry citrus fluff!

Aroma and taste are a little funky and fruity. Has some slight maltiness. Finish dry with some sweetness.

Habanero (2577) - Tranbjerg, DENMARK - AUG 2, 2014
Bottled. Pours ahzy amber with small off-white head. Aroma of citrus notes, yeast, spices and grass. Sweet flavor that ends up more dry and slightly bitter. Medium bodied, oily texture and soft carbonation. A very nice Saison.

Bottle from Hazels. Aroma is funky with barn yard, peaches and stone fruit. Palate is also funky with one of the most acidic palates I’ve had.

750 ml. bottle. Pours golden orange with a nice off-white head. Aroma of fruit, spice, yeast, malt, and spice. Taste is the same. Dry and tart finish. Decent.

Sampled at ESBLS. It poured a hazy golden/amber color with an off-white head. The aroma was of spices, some light spice from the yeast, a little fruit, a good amount of pale and caramel malts, and a light dough/toffee note. The taste was similar with some hints of tartness.
