Bottle. Pours red-brown with a big white head. Fruity in a almost grape, red wine, kind of way. Lots of strawberry notes. Quite sour. Quite heavy for a fantome.

Pours a mostly-clear blonde color with a nice white head. The nose has plenty of acid plus some lemon and apricot. The flavor is pungent with lots of fruit and acid. Sharply pungent, slightly stinging the corners of my mouth. Light body and a very dry finish. Very solid brew.

UPDATED: FEB 3, 2012 75cl green bottle. Gusher warning, cork explodes. Pours dark orange/brownish. Muddy looking with sediments and floats due to gushing. Big creamy white head. Lasting foam. Aroma is very sweet and complex: apples, pears, belgian yeast, molasses, slight alcohol, sweet spices, dark fruits. Taste: slight bitterness sorrounded by an intense malty sweetness. Molasses, caramel, pears and dark fruits. Slightly boozy. As it warms up a peppery spiciness comes through, burning down the throat. Medium to full bodied, soft carbonation. Overall, really nice and complex. Warming. Too sweet for my taste. Also, don’t expect a saison, not at all. It retains only a bit of spiciness from the style. More similar to a belgian strong, maybe even a quad for the huge amount of dark malts and fruitiness.

750 mL bottle shared at the January 2012 Santa Cruz tasting at Sante Adairius. Pours a hazy pale gold with basically no head. Fantastic aroma -- this is the kind of beer you might spend longer smelling than drinking. Apricot shortbread cobbler comes to mind, along with a mulled cider spiciness: cinnamon and cloves, perhaps cardamom. Flavor is a little less engrossing. Semi-tart, semi-sweet, with a vague fruitiness -- apples first, then a touch of lemon. The alcohol shows through just a little, contributing a sharpness that pairs in the finish with a significant hop bitterness. Dry with low carbonation.

Pour out of 750 mL bottle, pour is dark red with off white head, nice and lacing. Aroma brings notes of vinegar, nuts, touch of spice, hints of chocolate, touch of earth. Taste is mix of vinegar, toffee, some hints of vanilla, candied nuts, touch of spice, finishes fairly sweet, earthy.

UPDATED: JAN 27, 2012 750 ml bottle bought @ Bierkompass.de and consumed on January 26. Pours cloudy dark chestnut brown with a huge frothy white head that leaves some trace on the glass while dissipating. Smell is very sweet and fruity with sweet mandarin oranges, wet hay, leather, wool and cape gooseberries. Taste is slightly sweet, sour and very vinous with plums, grapes, hay, lemon juice, gooseberries and barnyard. Finish is slightly dry, slightly sour and fruity.

Thanks Eric! From the bottle. Pours a dark copper with a huge head. Nose has vanilla, almond and some citrus. Hop bitterness on the front. Nutty as well. Floral bouquet taste as well. Crisp and clean.

Pours hazy amber/orange with a white head. The aroma has leather, tobacco, stone fruits, sweet fruity malt, herbal notes and pepper - quite complex aroma and a bit confusing with the odd combo going on. Medium body that starts smooth and rich then gets more crisp and has frothy carbonation. The flavor starts with spiciness, rustic earthiness and sweet fruit with mainly peaches and lemons giving a sweet/tart taste. The leather and tobacco notes are still there pretty prevalent as well. The finish adds earthy basement funk and more odd fruitiness. Very interesting and more enjoyable that it would seem from the hodge podge of flavors.
