Bottle. Not wHat I expected. First, it pours with a draker color than a regular saison, almost orange. Also, there is a finish thta is not saison like. It is bitter, spicy almost like cough syrup, not bad but very unexpected. I got more into it as I finsihed the bottle, but unlike most saisons that go well with spicy foods this one clashed. So it is an interesting beer with hard to decribe flavor notes that overpower the funkiness that is also there.

750 ml bottle enjoyed at P4 thanks to Kan. Pours a hazy orange with an off white head. Nose is citrusy. Orange, lemons, apples, and lots of yeast. Flavors of apple, orange, creamy banana, biscuit malts, clove, and a touch of alcohol. Decent, I guess I just expect more out of the brewery.

750ml bottle shared with the Chi-Town crew. Very Fantome on the nose. Sweet and spicy. Pear. Lots of fruit. Floral and grassy. Pours cloudy, muddy copper with a thin white head leaving spotty lacing. Flavor is loaded with fruit. White grape, pear. Light, spicy yeast notes. Cut flowers. Nothing spectacular, but altogether pleasant. A decent sweet malt base. Creamy with nice carbonation. Lasting yeasty finish.

750ml bottle. thanks to Kan for sharing at P4. pours hazy orange-amber with off white head. nose of apple, pear, and white grape. flavors of green apple, white grape, mild citrus, toffee, and toasted biscuit. rather fruity and lacks a lot of the Fantome house flavor/yeast quality to it.

bottle samples at P4...... poured a hazy cinammon brown with a thin wispy light brown head....aroma of smarties, musty hay, and dark fruit..... one of the better saisons i’ve had recently. very fruity and somewhat medicinal in nature with a decent mouthfeel.

Appearance: Pours a hazy, amber body with a medium-sized, fizzy, off-white head.
Smell: Spicy, funkified aroma of dried tea leaves, citrus, herb medley.
Taste: Slight maltiness with some orange marmalade sweetness. All of the obligatory musty earthiness and barnyard accents. A few jolts of acidity along the way. Strong herbaceousness and plenty of spices. Semi-dry finish with lingering herbal hints.
Mouthfeel: Medium-thin body. Moderate carbonation.
Drinkability: I don’t even know where to begin.

Hazy orangey gold - lots of floaties despite being kept still for weeks. The head is a yellowy tan mountain at first which recedes after a minute or two. Nose is a rich caramel-laden saison. The yeast is lemony chalk, a bit of brett (cherry & hay), a hint of orange zest. Past that glorious yeast lies light caramel, toffee, slight graininess. Flavor is that cherry brett for a second then toffee, slight cocoa, cherries or plums (some kind of dark fruit.) More general brettyness comes in towards the end, along with an increased presence of dark fruits. Finish is somewhat bitter with a well rounded brett presence and tea-like toffee. The tea doesn’t quite do it for me but its freaking fantome - I’ve come to expect the unexpected. The second pour from the bottle is significantly funkier (and chunkier!) Body is a bit heavy, but not overly so.

Bottle, this one being sort of a post-tasting taste at Fin’s excellent UK Imperial Stouts tasting, sampled with Fin (Loz and Traci at this point I think had switched to wine) while watching the classic The Third Man. Thanks mate! Unclear peach color with a nice white cap and lace. Aroma is a big briny plate of fresh oysters, in a vivid and seaweed-laced way that leaves me feeling like oysters could actually be part of the brewing process. Under that, bananas and lemons. Sweeter than the nose would indicate, quinine, lemon salty funk. Lively, busy, idiosyncratic, good! My first Fantôme--thanks again Fin for breaking this out!

Tasted with Casey, Traci and Loz 14-03-08, Very fruity with a lovely floral quality to this, some sweetness but very refreshing nice chewiness to this, some spices drinks far easier than 8% the bitterness is there but it’s well balanced. I really liked this.

Pours a hazy copper color with a white head. Aroma is malty, wheat, coriander, herbs, and spicy hops. Flavor is malty, fruity, herbs, and a spicy finish.
