I like Fantome for the fact that their beer isn’t like everyone elses. That whole farmhouse mentality really works for me. This beer is a pretty decent one, I don’t remember the aroma too much, but it was solid, nothing special, nothing bad. The flavor was very complex, there was fruitiness and some tartiness as well. Both mixed very well and created a beer that is very fresh and interesting.

The thing about Fantome is that you roll the dice on every bottle you trade for/pick up, especially when it’s an older bottle. I traded for this recently and shared it with some folks at Dark Lord Day. With all the recent reivews being generally positive, I was really excited to finally give this one a whirl. It poured a cloudy orange in color with a half fingers owrth of head into my Greenbush taster. Both the nose and the flavor displayed a significant amount of breadiness. I didnt really get any grape, apple, or pear that others picked out and despite it’s age, it wasn’t all that oxidized, it was just very plain and bready. The mouthfeel was light to moderate with good carbonation and a moderate finish. Disappointment seemed to be the consensus on this bottle which was unfortunate. A lot of people expressed how they loved this beer before but this just wasnt good. Oh well, that’s part of the allure of Fantome I guess.

Huge, huge thanks to Ryan for this one! Longtime want. Served in a Fantome tulip. 2004. Dry, musty basement with a bit of earth. Very light bread crust. Touch of acidity in the background. Lightly bubbly. Bit of oxidation.

2004 bottle, enjoyed on 12/19/12. Served in a Hill Farmstead stem.

Pour: Murky burgundy, with a two fingers of light tan, soapy head. Leaves some solid lacing. Head hangs around for a while.

Smell: Up front, big lactic tones and some molasses. Gives way to figs and dates, and some lemon juice. Light caramel, and a light balsamic vinegar. Finishes on the nose with a lemony tartness.

Taste: Follows the nose with a big lactic tartness, and lots of lemon juice. Some pear skin. A big molasses comes through, with some nice caramel. A light oak (is this aged on oak for any period?). Finishes with red wine tannins and some lemon tartness.

Mouthfeel: Really light for the flavors it produces, which is really quite nice. Good carb, and the tartness is just right.

Overall: Time did another Fantome well. I’m very lucky to have stumbled across this bottle and have a chance to try it. Delicious!

750mL bottle, courtesy of julian, pours a cloudy dark orangey brown with a voluminous white head. Aroma is a bit oxidized with metallic notes, Belgian yeast, and stale wet cardboard. Flavour of wet cardboard, cork, and other dry, construction site notes. Lively carbonation. Too bad this isn’t a bit newer as I think this would be very enjoyable fresher, but as is now, this is past its prime. Not s good.

Huge thanks to Umberto for opening this during our epic night of drinking at the Goblin Pub in Pavullo nel Frignano, Italy. Pours a very cloudy, bright golden orange color with tangerine edges and a half finger off-white head that quickly settles into a thin ring that soon dissapears. Not much in the way of lacing. This beer has a very complex aroma with lambic, farmhouse and wheat beer notes bouncing off of each other. Lots of earthy funk with hints of barrel, wet hay and cobweb along with zesty autumnal spice, bready yeast, citrus and light fruit notes. Slight herbal/vegetal presence with lemon peel, pepper, bread and apple. Really odd combination but the nose is pretty inviting. Medium bodied and again, very complex with hints of lambic, saison, vegetable/spiced beer and wheat notes playing off of one another. Slightly tart and puckering with a decent amount of earthy funk followed by zesty spice, bread, sweet malt, light fruit and citrus. A decent amount of sourness but not harsh or acidic. More funk than anyhing else with grass, straw, hey and wood flavor. There’s also peppery spice with coriander, cinnamon and clove followed by caramel malt, apple, pear and bread. A truly unique beer. I don’t really know what to make of it because it’s so weird but it’s very complex and quite flavorful.

Bottle purchased today at Bottleworks. 2004 vintage. Color is clear coppery color with a bit of haze. Lots of carbonation, leaves a nice snowy white creamy layer of head upon the first pour. Aroma is of cork, cardboard, raw brocolli. Possibly oxidized over the course of 8 years. Mouthfeel is smooth with good carbonation. Taste consists of wood/cork, green apples, flowery hops, and on the finish an odd (yet not completely odd for a Fantome) leathery/tobacco quality. I wish I could have tried this fresh. Not my favorite Fantome in its current vintage. If you have this, I say drink it now.

Pour at Scott’s saison tasting, dark red pour with off white head, aroma has notes of herbs candi sugar, apple, sour fruit, lemon, caramel and toffee, hints of dark berry and oak as well, funky and spice notes come through. Taste is a mix of dark cherry, caramel, toffee, biscuit, bready notes with some candi sugar, green apple, slight oxidation with a sour fruit, and oak middle, finishing fairly sweet but sour, lots of subtleties going on.

750 ml green bottle poured a cloudy brown with a small lingering tan head. Aromas of carmel, butterscotch, fruittiness, barnyard funk and yeast. Palate was light bodied and crisp with a dry finish. Flavors of carmel, earthiness, citrus, light bartnyard funk and light spice with a crisp dry lingering fruity finish.

Been a minute! Had this a few times back in the BW days. Yeasty nose, hints of herbs and barnyard. Caramel tones, light spice, hay, and minor funk in the flavor. Fair amount of grass mixed in as well. Fantome, the weird, the strange. Never quite know what you’re drinking, but it’s almost always tasty!
