COMMERCIAL DESCRIPTION
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Bottle @ Scott’s Summer Saison tasting. Thanks so much Scott! A bit hazy, golden orange appearance with a cream colored head. Rich dandelion, floral, somewhat herbal, light citursy, honey aroma. Tangy, dandelion floral, citursy, honey flavor.

Pours a juicy hazy amber with a finger of white head. Smell is funky, citrus notes, sweet. Taste is funky tart, crisp and carbonated, powerful, goes down easy, dandelion in the aftertaste? Well done.

Bottle. Pours cloudy golden with an off-white head. Aroma of malt, floral notes, herbal, grass, yeast and spice. Flavor is sweet with some sour notes and malt, yeast, floral, lemon and yeast. Medium body, average carbonation. Nice one.

2005 bottle drank at l’autre oeil, aylmer, qc. pours hazy light golden with a small white cap, some retention. tart tropical fruits, saison yeast, lemon, herbal, grassy. acidity is way closer to sour ales than saisons. full of citrus, yeast and herbal-citrusy hops - medium hopping for a medium long finish. light to medium body, fizzy, almost aggressive carbonation. original, quenching, good but not the best saison i’ve had.

Blind tasting @ lusikka
Very high viscosity – looks like a hair gel. Aroma is sweet and sour with belgian yeast, fruits and citrus. Very thick palate. Flavour is tart and sour with some alcohol, fruits, rhubarb and farmhouse aroma. A bit messy with all the sourness and dryness. I guessed this to be a 7% saison.

Pours kissel or soup-like texture, orang color, no head. Aroma of sour fruits, apricot. Goose berries on the aroma and flavor, rhubarb, lots of fruits and mild spices. Quite odd to say the least.

Pours a deep orange colour with an extremely high viscosity. Forms foam clusters and looks like a fruit soup. Aroma of strong apricot and some spices. Flavour of sweet and tangy and slightly sour notes. Grapefruit too. Very, very fruity stuff. Did they put gelatine here or what? Finishes with alcohol and strong fruitiness. Weird but seems to work.

Bottle. Hazy amber with a large, fluffy white head. The aroma was light sour with spices, lemon, barnyard and some light notes of alcohol. The taste was dry with spices, lemon, barnyard and some brett. Refreshing stuff.

Bottle at my CBC birthday, London, thanks to Paul. Pours cloudy gold with a fluffy, white head. Tangy lemon and grass in the nose. Light to medium sweet flavor with tangy lemon and doughy malts. Medium bodied with average carbonation. Lightly drying on the finish with mild grassy bitterness, more dough and tangy, zesty lemon. Drinks impressively well.
