Commercial Description:
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

2008-05-17. I busted out the notebook after finding out it was a vintage bottle, then proceeded to enjoy it too quickly to take decent notes. Hazy amber, golden, small white head. Big dandelion aroma, pleasant bitterness. Average palate suits the beer nicely. 8/3/7/3+/15-16 - 3.7At Rudolf’s, 2004 Vintage bottle, shared by IPFreely <P>October 2005. Slight haze in a brown amber body. Big cream coloured head and decent lacing. Floral notes over mildly spice malt in the nose. Whispers of alcohol in the aroma. Bizarre flavour. Dry but not, grassy - chlorophylly dandelions that I can’t decide is real or not. Relatively dry overall, overshadows a bed of sweet malt. Slightest note of bitterness. Average palate. Thanks OKBeer. 7/4/6/3/15 - 3.5

Bottle: Courtesy of MI2CA via trade. Aroma is creamy, fruity, and yeasty with a touch of tartness. Pours a cloudy reddish-orange with a nice white head with okay retention. Moderately yeasty up front with a light creaminss as well. Nice tartness in the middle and a flowery bitterness in the finish. I don’t know that it comes across as dandelion.

Bottle. Orange-brown in colour, large off-white head and lots of lace. Beautiful aroma was of mustard seeds, weeds, grass, yeast and flowers. The flavour was grassy, some light mustard, floral hops, herbal and some yeast. Medium/light body, medium carbonation. Finishes with a herbal bitterness, lingering and dry. Fantastic stuff, another amazing Fantome.

Bottle poured a cloudy orange amber with a huge thick white head and heavy lacing. Sweet malt and yeasty aroma. Watery body with a sweet malt and yeast aroma and bitter finish. Alcohol is very well hidden.

Bottle. Light must and weed aroma. Dark orange yellow color - cloudy with gigantic head and violent effervercense. Earthy malt flavor with dandelion flavor being pretty strong in my opinion. A moderate bitter finish. A very interesting brew. Saisons always catch me off guard with their alcohol content - would have never guessed this was 8%.

Bottle: Aroma of sweet fermented apples and light alcohol presence. Body was dark copper color with off white head. Odd flavor to this one sweet and yeasty. Had second pour and that had a darker apple color and the sweet flavor settled down. Left a mild sweet aftertaste on palate. On the bottom of glass I found some danelion sludge.

slightly acrid aroma, vinegar, sour apple and grass were the distinct smells to me. the pour was a cloudy orange with a soapy white head on top. a slightly sour apple character to the flavor as well, along with some yeast and alot of the grass (i assume this is the dandelion) along with a nice blend of spices. the spices finish up the aftertaste very nicely. another odd, yet strangely enjoyable experience with fantome.

Bottle. Okay, I admit I bought it ’cause it’s called PISSenlit. Blame on the eternal junior high wise-ass in me. Anyway, Fantome is fast becoming a favorite brewer of mine. Pours a rich, deep amber with a thick, full head. Nice lacing around the glass. Aroma is a bit stale and coppery, but the flavor quickly makes the drinker forget that aspect of the beverage. Hints of raisin, bread, caramel, and fruit abound in each sip. Very acidic tasting when it’s cold, but as it’s warming the effect is dulled very nicely. Rounds out on the back of the palate and parks itself under a cool shade tree. Great beer, but not the best Fantome I’ve had.
