COMMERCIAL DESCRIPTION
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Bottle. Light must and weed aroma. Dark orange yellow color - cloudy with gigantic head and violent effervercense. Earthy malt flavor with dandelion flavor being pretty strong in my opinion. A moderate bitter finish. A very interesting brew. Saisons always catch me off guard with their alcohol content - would have never guessed this was 8%.

Bottle: Aroma of sweet fermented apples and light alcohol presence. Body was dark copper color with off white head. Odd flavor to this one sweet and yeasty. Had second pour and that had a darker apple color and the sweet flavor settled down. Left a mild sweet aftertaste on palate. On the bottom of glass I found some danelion sludge.

slightly acrid aroma, vinegar, sour apple and grass were the distinct smells to me. the pour was a cloudy orange with a soapy white head on top. a slightly sour apple character to the flavor as well, along with some yeast and alot of the grass (i assume this is the dandelion) along with a nice blend of spices. the spices finish up the aftertaste very nicely. another odd, yet strangely enjoyable experience with fantome.

Bottle. Okay, I admit I bought it ’cause it’s called PISSenlit. Blame on the eternal junior high wise-ass in me. Anyway, Fantome is fast becoming a favorite brewer of mine. Pours a rich, deep amber with a thick, full head. Nice lacing around the glass. Aroma is a bit stale and coppery, but the flavor quickly makes the drinker forget that aspect of the beverage. Hints of raisin, bread, caramel, and fruit abound in each sip. Very acidic tasting when it’s cold, but as it’s warming the effect is dulled very nicely. Rounds out on the back of the palate and parks itself under a cool shade tree. Great beer, but not the best Fantome I’ve had.

750ml. bottle. Hazy, dark amber color with a huge off white head. Floral, spicy aroma that is very inviting. Earthy, floral flavor with some nice background yeast and spice. I have yet to have a Fantome beer I didn’t love.

UPDATED: SEP 2, 2005 Bottle. Gotta love it, subtle as always from this brewer. Spicey, flowery, with a nice farmyardy, earthy character. This style of beer is right up my alley. Soft, subtle and funky. Nice touches of caramel, with a dry, lightly woody, spicey/herbal finish. I like it, what can i say.

UPDATED: NOV 10, 2006 2004 bottle: When first reading about this offering from Fantome, I was definitely taken aback when finding out they were making a beer from dandelions. These guys have brewed some daring beers before, but I thought maybe they were going too far. Once again these guys have proven that they can brew an amazing beer using some of the most unorthodox ingredients out there.

Pours plum red with a thin but stubborm pinkish head. The first aromas of New England in the spring are what initially struck me when I caught the first scents radiating from this beauty. Smells strongly of morning dew, wet grass, barnyard and mustard seed. Tastes of salad, vegetal, with some nice sweet cherry-like undertones. Peppery on the tongue with a nice bitter finish. Great lasting lacing throughout the entire drinking experience. This is definitely one of the most unique saisons I’ve ever had.

bottle-thanks to whaleman for letting me sample this somewhat rare beer. pours a murky amber here with an off-white head. probably the darkest saison i have ever seen. yeasty, funky, lightly flowery with notes of spice. I love the yeast note here. medium body with alot of character in the depth. well balanced between all the crazy yeast character and the malty, fuirty, flowery notes in the flavors. unique and tasty. Thanks Whaleman!

Bright metallic copper hue with a foamy white head. Great bouquet of wild flowers, herbs and rosy esters with spicy cinnamon and clove notes. Lightly sweet and well-balanced. Another very distinct Fantome beer, more elegant than most.

UPDATED: DEC 28, 2005 (Bottled, 0.75l) Very hazy dark brownish amber color (much like sahti) with a smallish head. Sourish, a bit stingy aroma of toffee, dandelion and malt. Slightly sweet and tart flavor of caramel, spices, malt, hints of rye, wood and toffee, some aromatic-flowery hops and a long, bitter finish. The dandelions are quite clearly present - while alcohol certainly isn’t. Medium-bodied palate with smooth carbonation. A bit straightforward, but balanced, nicely dry and enjoyable countryside brew. Softer with the yeast poured in, as usual. Very refreshing in mid-winter, too!
