COMMERCIAL DESCRIPTION
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

UPDATED: DEC 17, 2011 Bottle (had about four years of age on it)... Poured hazy golden with a big, bubbly white head. Nose had some funk and a poopie diaper thing going on. Tasted of flowers, botanicals, herbal spiced yeast funk. Very dry, lots of lemon flavors too.

Ausgewogen hefiger Heruch. Starker CO2 Antrunk mit hefigen Noten. Nun hopfiger und „champagner-mäßig“ trocken, ein leichter Säurestich ist vorhanden. Interessant, nun etwas kräuterartig. Im Abgang ist die Säuerlichkeit und die Trockenheut noch deutlich präsent. 11/10/10/11/11/11

Botella. Hazy orange. Lovely sour fruity citrus aroma. Ok mouthfeel. Quite pleasant sour tart fruity citrus flavour, dry, orange towards the finish, nice.

Bottle. Pours cloudy golden with a small white head. The aroma is acidic, oranges, citrus, light spice and grape fruit. The flavour is quite acidic, sour, grape fruit, oranges and leather. Pepper in the finish as the beer raises its temperature. It very dry!! Overall its a sour ale to me and its a very good one indeed. Not the regular yeasty overly peppery thing we get from Fantome.

UPDATED: DEC 10, 2011 750mL at The Goblin Pub in Pavullo nel Frignano, Tuscany. A major want item for awhile now. The pour is a hazy deep strawberry with a medium, bright white head. Nice retention. Spotty lace. Aroma is berry heavy, fruity, melon heavy like jackfruit and papaya. Taste is tart, vinegary, heavy on the berries and melons. Very fruity. Not really saison at all. Much different than I was expecting. Will need to revisit. 4/13/2011 7/4/7/4/14=3.6

750mL from Belgium. The pour is a glowing, hazy deeper orange with a towering, rocky white head. Nose is excellent: banana, mango, papaya, orange fruit juice blend. Small vanilla, and even some super complex lambic/geuze like wild notes. Hot damn. Taste is citric, fresh, orange and mango fruit juicy with large lactic sourness. Still very saison feeling. What a beer! Definitely a classic for style if you are able to score one of these amazing bottles from probably the most inconsistent brewery known to man. Superb! So refreshing. Perfect thirst quencher and perfect saison! 12/10/2011 8/4/8/5/16=4.1
