COMMERCIAL DESCRIPTION
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Glass:Oerbier tulip.
Appearance:Hazy gold/orange pour with a thin white head.
Aroma:Aroma was decidedly floral, with a hint of bread, and almost no hint of sour.
Flavor:Very sour. Almost no other characteristics present other than the citrus lemon/lime. A hint of some sour green apple present also, but wayyyy in the background.
Palate:Light bodied with solid carbonation.
Overall:I really enjoyed this, though it wasn’t at all what I expected. Very sour, and I hadn’t had this level of sour in any of my Fantome beers before. Very good for the price at 12.99.

Pours a amber/yellow with a small off white tight head. The aroma is tart, fruity and spicy. The The flavor has grape skin, apple, herb, spice, and candy. The mouth feel is velvety. Not bad, but not my favorite fantome.

Pours hazy orange with a thick foamy head. Aroma is very funky. Smells like good saison. Flavour is bold and slightly sour. Has a nice flavour to it with a very nice hop finish. Sour but drinkable. Nice brew.

Bottle, thanks to Doodler. Pours slightly hazy orange, medium to thin off-white head, no real lacing, spotty at best. Nose is lightly sweaty and funky, loads of lime-based citrus, sourdough bread, very doughy. Flavours run to the funky lemon and apples, some "sweaty" character, some limes and barnyard, hay. Not my favorite Fantome.

’03 Bottle at Ebenezer’s. Pours a hazy orange with a small head. Aroma holds beautiful orange peel, cinnamon apple sauce, yeast, and tart Bretty funk. Flavor continues with lots of funky Brett presence, along with excellent peach and dough qualities. The palate is extraordinary- crisp and very dry. Awesome saison.

Orange body with a white head. The aroma is citrus (orange-lemon), cinnamon applesauce, dough, and sour brett. The flavor is sour cider, orange lemon, dough, nectar fruits, and more brett. The palate is dry and crisp with awesome smacking sourness.

’03 Bottle at Ebenezers Aroma is wonderul tartness, dough, dry yeastiness, a flutter of applesauce. Flavor is farmhouse spice, apple, some light sourness, yeast, bready dough. Clean palate with some wonderul effervescence. Wow. Really Really nice.

Bottle at Lion’s Pride - almost 2 years old according to our bartender. Dark copper pour with thin white head. Aroma is quite grassy, lots of sour wild yeastiness, that classic farmhouse aroma but twice as strong as usual. The grassiness comes out litteraly smelling bitter can’t wait for the taste. The bitterness does come through, along with a lot of that same wild sourness that has just been developping in the cellar very strong taste. Palate is perfect, along the same lines as the fantome saison we had just before it. We did have them in the right order though, because this one was a flavor bomb.
