COMMERCIAL DESCRIPTION
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

This bottle is my 39th birthday celebration, albeit 6 days late. I’ve been eager to try this for years. Copper pour, big fluffy off-white head (the carbonation is certainly ample and then some!). Rather to my surprise, malts are quite prominent in the aroma. Also summer fields, dust, mild spice. The flavor is exceptional. The dandelion is there for certain, atop a powerful backing of barnyard dust. Very dry, not as sour as many from Dany, gentle spices as likely as not from the yeast. More dust. Hot fields and cut grass.

Superb beer. Having tried it at six years of age, I’d love to try it fresh.

Bottle at Paul’s saison tasting - awesomely strong. tart, earthy and herbal. pours hazy orange. cirtusy/orange juice and lemon-lime flavor, sparkly with a touch of spice.

A: Hazy orange body. Moderate sized white cap. Quickly faids to a very light skim. Spotty lacing left on the sides of the glass. S: Rick funky nose. Lemon, green apple, bready yeast. Typical farmhouse funk. T: Surprisingly tart blast up front. In some ways more reminiscent of a wild ale than a saison in this respect. Lemon zest, green apple, yeast, coriander and a slight funky tartness. Some floral components. M: Good carbonation levels. Light-medium bodied. Good zing to it in the finish. Slightly refreshing. D: The tartness is a bit overpowering for what I was looking for in this saison ... an interesting saison that clearly is reflective of the dandelion addition.

Pours orange with a creamy white head. Nose is orange peel, grass, wildflowers, juice and spice. Taste is sunflower seed, spice, orange zest and orange juices.

750mL bottle. Pours a cloudy orange amber, with some off white head. Aroma is like apple cider... very musty and sour, with lots of spicy yeast and tart apples and oranges. Flavor is earthy and funky in an restrained way that’s well balanced with tart apple and mildly bitter grapefruit peel. Mlid sweetness. Finish is gentle, with a bit of citrus and bitterness.

Slightly hazy orange pour with a thin white head. Floral and fruity aroma. Notes of apple and slightly nutty toasted malt. A bit of dust and funk. Moderately tart flavor with apples. Some musty barnyard. Bitter finish.

Floral and honey nose, fresh herbs and a touch of bready malts. Lightly tart taste, lightly sweet, lots of honey, some cotton candy, lots of fresh flowers, lemons and yogurt. Medium body is soft with moderate carbonation.

Bottle shared at Dickinsonbeer’s Saison tasting. Pours hazy golden orange with a thin head. Spicy yeasty and flowery aroma with some lemony notes. The flavor has a refreshing tartness, some floral notes and a light citric sweetness. Solid.
