Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Cloudy golden with a well-mannered white head that sticks around. I swear I pick up a lot of dandelions (or maybe generic flowers) in the aroma, so the brewer doesn’t lie! Taste is sweeter (or rounder) than expected but it then ends up completely dry, quite strange actually. Flavors are vegetal, flowers again with some alcohol showing. This Dany Prignon guy is quite an artist and this may be a little gimmicky, but I’m enjoying it!

750 ml. bottle from Perry’s. This one has been sitting in their fridge for a loooong time and I’ve been eyeballing for just as long. It finally went on sale, so I decided to take the plunge... It pours a clear orange color with a disappearing, fizzy white head. The aroma is interesting with fresh breeze, stone fruit and nectarine. Lightly earthy/spicy yeast. The flavor is tart with more nectarine, light earthy spice and a medium salty/tart finish. Fruity, salty, tart with a reasonably light body and complex finish. Nice stuff.

Bottle from Pat, thanks man! Appearance is a dark golden with nice white head. Aroma is flowers, lemon lime, and grass. Taste is lemon grass, white grapes, oak and a touch of bitterness and a dry finish. Medium mouthfeel, nice carbonation. Very refreshing, not sure I get the dandelions nor would I really be able tell if they were there but this is a winner either way.

Birra ambrato carico, schiuma bianca croccante che non dura molto. Odore acido di sudore e di.legno, caramello, erba. In bocca c’è il caramello, la base maltata si sente e si avvertono anche i sentori acidi e di legno. Tante spezie e finale erbaceo. Birra che si lascia bere.

In short: funky bitter ale.
Pours murky orange with frothy off white head. Short head retention, some lacing. Citrusy, zesty, spicy aromas. Light to medium body, average to high carbonation, crispy texture. Taste is moderate bitter, dry, citrusy, spicy, subtle tart notes. A funky ale, spicy, with a distinctive twist, quite different from other wild ales. Very interesting and quite enjoyable.

From notes. Tasted on 8/25/13 from a capped and corked (I think) 750mL bottle. Pours cloudy deep burnt orange with an average white head that leaves average lace. The nose is spicy yeast, a touch of caramel malt, and a nice herbal dandelion flower aroma. The flavor is plenty spicy with a bit more caramel malt than expected, and that same floral herbal note. The body is fairly full with lively, but smooth, carbonation, and a long spicy, white peppercorn finish.

Latest Batch P: Reddish brown/orange with a two finger light tan head. S: Pears, spices, malt, plums and that fantome funk. T: Sweat pear notes, malt, spices, some apples and a lot of yeast. M: Medium body and highly carbonated. O: Enjoyable beer from Fantome.

hazy earwax gold with fluffy white head collapsing to lacing. Tart acidic funky but on opening up plenty of fruity peach. Moderate carbonation and body, slightly funky plasticky, smoky, sweet, vegetal, dry. Not sure if I’m a fan.

UPDATED: DEC 30, 2014 Bottle: Cloudy, murky, borderline swamp copper-tinted amber. Almost brown with a foamy off-white, quickly fading head. Aroma of sticky caramel, ashy herbal notes, floral leaves, white pepper, light band-aid, farmhouse bales of wet hay, & old cork. Flavor is more earthy, with a big note of forest floor, herbal leaves, white pepper, caramel twinges, Belgian spiced yeast, some mild esters, a touch of vague fruitiness, & some more of that musty old cork-like funk towards the finish. A bit of moldy driftwood lingers in the finish, semi-funky & moderately sweet. Slightly sticky, pretty bold bodied for a saison.
