COMMERCIAL DESCRIPTION
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Cloudy golden with a well-mannered white head that sticks around. I swear I pick up a lot of dandelions (or maybe generic flowers) in the aroma, so the brewer doesn’t lie! Taste is sweeter (or rounder) than expected but it then ends up completely dry, quite strange actually. Flavors are vegetal, flowers again with some alcohol showing. This Dany Prignon guy is quite an artist and this may be a little gimmicky, but I’m enjoying it!

Bottle. Light amber, cloudy, small and fully diminishing head. Moderate, malty and dryish and lightly sourish aroma, light fruitiness and citrus with light hoppyness. Body is medium, malty and dryish, light sourness and citrus, light alcohol. Finish is average, malty and dryish, faint sourness and light citrus with light - some sharp spiciness (pepper), light hoppyness, some alcohol. Way too much alcohol considering the body. To put it nicely - don’t believe the hype.

One of Fantôme’s better known spice beers, this one made with dandelions Danny Prignon harvests himself in the brewery’s vicinity. Rocky, very thick and stable, off-white head, orange blond colour, almost amber, hazy with a ’stormy’ fizz. Fruity, ’wild’ aroma of wet hay, sherry, peach, freshly cut grass, sweat, lemon peel, banana, meat broth but no apparent dandelions (whatever aroma that would be). Fresh citrus acidity in the onset, lots of sharp carbonation, supple and lightly powdery mouthfeel, very yeasty palate, peach, caramel, honey, sour accent lasts till the end, dry finish with grassy hops, bitterishness probably due to the dandelion as well, but I cannot recognise it with certainty.

Pours hazy dark orange with a small head. Aroma has mainly notes of yeast, alchool and a moderate sweetness also a bit sharp. Aa is warms the aroma from the dandelions can be felt quite strong. Flavor is moderate to heavy sweet with a distinct and sticky note from the dandelions.

Bottled. Hazy amber color, creamy head. Strong, slightly acidic berry nose, gooseberry, slightly spritzy grapefruit, black currants, leather and dirt. A whiff of alcohol. Malty and slightly sweet, slightly harsh/bitter spiciness. Berryish alcoholic and slightly tart finish. Medium body, a bit oily and heavy. Quite low carbonation. Complex but there?s something strange in it.

Flaske (med både patentkork og vinkork - her tar de forsegling seriøst!), delt på dag 2, RBHD-samlingen hos Asle Bjørn: højt skum! Vakker gylden farge. Aroma av friske løvetannblader (og det vet jeg som fjerner all løvetann i plenen manuelt). Smak av de samme + blomstersødme og røyk/aske. Farlig lett for sin vinkelhastighet. Fint karbonert. En annerledes og god saison.

Shiningly golden. Dense off-white head. Ash, sour peat, dried fruits and raw vegetables in aroma. Sourness and a hint of sour peat in taste and aftertaste.

Shared bottle during RBHD Mosterøl gathering. Clear golden body with a lasting cappucino colored head. Smoke, acidity and floral notes on the nose and in the mouth. Ashy finish. Medium bodied. Easy to drink.

Shared 750 ml capped and corked green bottle at local tasting. Orange colour, large white head. Light spicy aroma with hints of dandelion "milk" and smoke. Light bodied for its strength. Fairly fresh but still unusual flavour, the dandelions probably, medium sweet with a slight acidity. Does not blow my socks off.

Light amber, thin to no white head. The malt profile is not far from a bière de garde, caramel. The bitterness of dandelions is rather harsh and one dimensional compared to hops.
