COMMERCIAL DESCRIPTION
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Cloudy golden with a well-mannered white head that sticks around. I swear I pick up a lot of dandelions (or maybe generic flowers) in the aroma, so the brewer doesn’t lie! Taste is sweeter (or rounder) than expected but it then ends up completely dry, quite strange actually. Flavors are vegetal, flowers again with some alcohol showing. This Dany Prignon guy is quite an artist and this may be a little gimmicky, but I’m enjoying it!

Fint karbonert. En annerledes og god saison.

Shiningly golden. Dense off-white head. Ash, sour peat, dried fruits and raw vegetables in aroma. Sourness and a hint of sour peat in taste and aftertaste.

Shared bottle during RBHD Mosterøl gathering. Clear golden body with a lasting cappucino colored head. Smoke, acidity and floral notes on the nose and in the mouth. Ashy finish. Medium bodied. Easy to drink.

Shared 750 ml capped and corked green bottle at local tasting. Orange colour, large white head. Light spicy aroma with hints of dandelion "milk" and smoke. Light bodied for its strength. Fairly fresh but still unusual flavour, the dandelions probably, medium sweet with a slight acidity. Does not blow my socks off.

Light amber, thin to no white head. The malt profile is not far from a bière de garde, caramel. The bitterness of dandelions is rather harsh and one dimensional compared to hops.

750 ml bottle from Les Vignerons (2012 vintage). Dark amber, pretty hazy, with an average, creamy, moderately persistent off-white head. Pungent and rustic nose, quite fruity, yeasty, definitely floral and almost herbal/medicinal in a way. Doesn’t look like a Saison but it certainly smell like one. Slightly bizzarre upfront, tasting almost lactic and sirupy, quite a big astringency, not as dry as hoped or expected. Moderate bitterness, pleasent malty and herbal sweetness. A hint of toffee and bubblegum in the aftertaste. Soft to average carbonation, light to medium body, slightly creamy texture. Well, it’s my first ever Fantome and I’m still alive after half bottle, that’s a good sign I guess. Strange, unusual, interesting and quite unique beer. Tasty.
