COMMERCIAL DESCRIPTION
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Ausgewogen hefiger Heruch. Starker CO2 Antrunk mit hefigen Noten. Nun hopfiger und „champagner-mäßig“ trocken, ein leichter Säurestich ist vorhanden. Interessant, nun etwas kräuterartig. Im Abgang ist die Säuerlichkeit und die Trockenheut noch deutlich präsent. 11/10/10/11/11/11

2004 Vintage. Poured a deep golden color with a larger sized off white head. Aromas of flowers, citrus and yeast. Tastes of flowers, apples, yeast, barnyard, and lemons. Lightly sweet. Crisp and clean finish. Very good.

Bottle. Golden colour with an off-white head. Aroma is yeast, citrus. Flavour is yeast, citrus, orange, dandeleon, spices, sour. Special beer, but i like it in a special way.

Bottle at l’Autre Oeil, Summer 2005. Red brown ale, hazy and dirty, with no head. Sour ground cherry in aroma with fiddle head, and light coriander. Spiced malts with sweet spiced notes, dandelion, licorice and vinaigry acidity. Smooth and enjoyable.

Spring 2001 bottle: Pours a hazy goldenrod with a thick lacing white head. Rich malty aroma filled with dark fruits, flowers, and Belgian yeast. Starts sweet, thick and malty with a very pleasant flowery taste which I'm assuming comes from the dandelions. Finishes dry and sweet with a light bitterness. Very smooth, and very enjoyable, one of the best saisons I've had.

(Draught) Dark amber, fully cloudy; dense head, consistency and colour of coffee cream. VERY fruity nose, a little bit of cookies, faint spicey. Bitter-dandelion taste (obvious). There are quite some restsugars. Bitter is not oppressive, fresh-clean tasting, garden herbs and citrus in the finish. Medium to well bodied, creamy mouthfeel. Just a spur of alcohol, estery. The dandelion returns in force in the aftertaste. Wow - this beer has been spectacularily bettered in the +/-8 years since I last drunk this; creamier, less aggressive - that’s bettering performance!

Bottle. Pours with a vibrant golden body and a quick to fade white head. Aroma is lactic, tart, weeds, dandelion, Welches Concord grape juice, grass and urine. Flavors are fruity, grassy, and lactic. Medium to light bubbles. Dry with some acidity.

UPDATED: NOV 9, 2005 (Bottle) : Perfumy citric acid atop the typical sweet and mysterious Fantôme yeast...Fresh flowery notes bearing milky chocolate and exotic spices (curcuma?)...I like when an eccentric feather is tickling my palate...

(Tap at Spuyten Duyvil and The Moan and Dove) : Spectacular dirty yeast and flowery spice interplay with a much maltier body of dried apricots and multifarious fruit...A totally different beer, with a bigger mouthfeel, a unique mark of the genius, worthy of sitting high in the realm of Belgian beer fame...I need more of this version!!...

A 5-year-old bottle from Spring 2000 was gum-drying and earthy, with loads of sweet fruit on top, mysteriously...A weird mix of acidic and vinegary tang was taking over, but only to add flavors for now...It had held up quite well, although the opinion around the room diverged as to the purpose of aging this...I don’t think it should be aged, but it was pleasant to try it in this form...

Warning! Early amateur rating! Cloudy amber beer. Sharp and crisp start leads to sour fruit that is refreshing/ Long sweet and sour floral finish. A cracker of a unique beer. Would dearly love to have tried the Special version!

Slight gusher. Deep hazy orange. Floral and fruity aroma, spicy. Very lively carbonation. Big hoppy bite too - it really tingles in the mouth. Acidity quite high - a really good aperitif with both that and the 8% alcohol (which isn’t noticeable at all). The body’s quite a simple maltiness, a touch grainy and some pleasant herby spiciness all in good balance. However, it’s the hops that are to the fore. Shame about the fizz, otherwise this would be heavenly in the mouth.
