COMMERCIAL DESCRIPTION
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Wasn’t to fancy about this one. Hazy light amber color, malt and weird orange taste. Celery aftertaste. Kind of sulphury nose.

Pours a flat yellowy-peach with little fetuses floating throughout it. Nose is peaches, herbs, bark, lemon peel. Taste is heavily floral with a bizarre fruity juicy syrupy finish.

A yellow color beer with a good size head. The aroma is sour, citric, & some funk. The taste is very lemony and reminds me of watered down lemon juice, in fact this is watered down lemon juice. A bit one dimensional.

Very high viscosity, really weird upon pouring. Cloudy orange beer, weird thick slimy head, like when stirring hard in a bucket of wall paper glue. Aroma: sweet ripe to rotten fruit, medlar, some citrus. MF: little carbon, very thick slimy body. Taste: pretty sour start, bitter notes, oranges, little sweet and grassy. Aftertaste: more sour acid touches, spices, bitter dry ending. Extremely weird, both in MF and in taste.

750 ml bottle shared with Ben, served cool in a Petrus goblet (tulip?). Spring 2003. JN06/08.

App.: very cloudy orange, smallish white froth. Aroma: Lots of lemon a bit of funk, light rubber, some organic acids and a fair amount of bitter greenery and barnyard. Palate: Medium-light body, very little effervescence. Flav.: Light stale apple juice, a bit of sour cherries, a little stale, a touch of funk, some organic acids; somewhat tangy, somewhat bitter, light lemon on the finish and a touch of funk.

Didn’t meet my expectations.

Appearance: starts with a loud pop of the cork, opaque rusty orange, huge cream head, lots of tiny bubbles
Aroma: big spicy aroma
Flavor: light spicy malt flavor, no bitterness other than the spices, no aparent alcohol but a bit warming, once it reaches room temperature it turns bitter weird

bottle 2004. pours claer copper, respectable tan head with some lacing. aroma is yeast, flowers, grain ,pepper. flavor is musky, dried fruity, spicy and peppery. full, bubbly, peppery mouth feel. not a favorite style. what am i gonna do with the rest of the bottle?

750 ml bottle. Hazy golden body with a small white head. Aroma is herbal and yeast, a hint of lambic in the aroma. Flavor is wild and sour with some bitterness. Not very complex but definitively not straight forward as well. Strange and nice.

Bottled sample. Cloudy dark gold in colour with zero carbonation. Aromas are of old wood, citrus, marshmallow, and earth. Tart sour citrus leads the way in the mouth, followed by grasses, earth, a bit more wood, and faint dandelion. Quite heavy in the mouth, even with the lack of carbonation. The acidity makes it at least somewhat drinkable, even when flat. A real shame that it’s flat, as it would have been pretty damn good carbonated. This is my second flat Fantome beer out of about twenty different bottles that I’ve had.

75cl Bottle, bought at the brewery, thanks Harmen! The weirdest pouring beer I’ve seen so far, looks very slimey and syrupy. Muddy light brown colour, looks like liquid Werther’s Original, soapy off white head. Aroma is sour, light floral, a bit fruity. Flavour is rather bitter, floral, tart-sour, hint of caramel, sour-bitter finish. Slimey mouthfeel, thick, lots of carbonation. OK.
