COMMERCIAL DESCRIPTION
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Bottle, thanks Dany! Cork explodes out with a gunshot-like bang, leaving 1/4 of the contents all over the countertop. A promising start! Weird, floral tangy aroma. Very saison-like, but not as funky as other Fantomes. Grassy, zesty and crisp in the mouth. Yep, it tastes like dandelions. A clean sweep of saison-like yeast throughout. Really spritzy, lemony character in the middle that is awesome. Refreshing and interesting.

Shared champagne sized bottle @GrOve’s. Bright amber colored body, under a layer of beige bubbles. Sharp herbal, light lemony and floral aroma. Yeast notes and hint of grainy malts. Lemony, floral and herbal flavor, as well. Light grainy malt base. Light astringent and lively in the mouth. Medium full. Sharpish herbal endnotes. A little edgy, but drinks ok.

Bottle thanks to pimp. Pours a cloudy yellow with large frothy off white head that lasts awhile leaving sticky lacing. The aroma is floral, hay, lemon and funk. Thick mouthfeel with a dry lemon, spice, and some sourness with light funk and dry finish. Hides alcohol well, a very good saison from Fantome.

Poured from a 750ml bottle. Poured cloudy with lots of head. Citrusy, bready, malty, dusty, rustic. A solid saison.

750 ml bottle thanks to Craig. Pours a somewhat cloudy golden color with a medium white head. A big fruity and Brett nose. The flavor is excellent: floral notes, berries, funkiness, deep dry earthy malts. Very nice.

Bottle. Hazy orange liquid with small white head. Aroma of white pepper, grain, lemon, spices, flowers and grass. Taste is dry, light bitter and light sour with notes of grain, white pepper, flowers and grass. Medium bodied with medium to high carbonation. Great stuff.

En trevlig saison. Frisk och syrlig med smak och doft citrus, belgisk jäst, citron, gröna äpplen. Len och rund med en torr citrusskalsbeska. Gott.

Bottle @ WWT II. Pours hazy amber with a large white head. Aroma is dust, spices, yeast and it also reminds me of cow manure. Taste is funky, bit of sourness and dust.

Bottle @WWT II. Gusher! Pours a dark amber with a big white head that leaves quickly. Aroma is fairly tart and funky. The flavor is again quite funky, sour and tart notes. Very interesting brew, nut sure if I can taste the dandelions. Very sweet in the aftertaste. Decent!
