COMMERCIAL DESCRIPTION
Dany, the offbeat brewer at Fantôme, will try anything, and the results are always interesting. A beer made from dandelions would be worth a try if only because no one has ever brewed one before, but the great news is that this is actually a very good beer.
Dany and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite. You may have to strain to taste the dandelions, but you know they’re in there.
It should be noted that uncooked, the dandelion has a diuretic effect and is known in France as Pissenlit (literally, "wet the bed" - this also happens to be the British folk-name) for precisely this reason.

Big thanks to jdubfl for sharing this one. Pours hazy yellow with a white head. Nose is lactic, acid, malt, citrus, flowers, herbs, tartness, astringency, and a hint of earthy meadow. Flavor is about the same with plant and meadow notes in all of the sour flavor. Excellent beer with acidic qualities blending into a unique saison.

Lucky I had my Pfriem tulip nearby when I pulled the cork from this one - really gushed. Didn't lose too much. Poured right away. Deep amber color, dark for a saison. Honey-like in its opacity. Not much of a head and it dissipated vet quickly. No lacing whatsoever. Smell is very muted, which ends up bring a theme with this one. Some fruity esters, oak, and earthy notes, grains and wild flowers. Malt sweetness. No real funk or phenols evident, too much malt and sweetness to get any grass or hay. Really hard to pick up specifics. Stone fruits--peach and nectarine--lead. Very soon after there's a grainy butterscotch flavor, perhaps caramel. Yeasty spice helps it finish dry. Oaky, floral flavor hidden in there. No real pepper to speak of, no alcohol heat. Maybe a slight herbal characteristic, oregano? Overall muted flavors, hard to get much of anything underneath the unique stone fruit/butterscotch combo. Medium body, nice carbonation. Slightly oily. Definitely the least unique Fantome I've had. Some tripel characteristics and uncharacteristically malt driven for a Belgian-made saison. ---Rated via Beer Buddy for iPhone

Hazy brown appearance. Aroma is floral, malty, caramel. Initial sweet malty taste quickly becomes rather tart. A bit too tart. Background has an earthy, yeasty taste.
