UPDATED: DEC 2, 2007 Hazy yellow color with a huge white head. Aroma and flavor of spices, citrus, lemon and yeast. Flavor is also pretty bitter.

Pours a hazy golden colour. Sour moldy aroma. The flavour is bitter, sour, herby and yeasty with some lemon. Dry herby bitterish finish.

750ml capped and corked bottle: Great looking pour - hazy gold with a creamy, two finger head. The nose is really different, with strong hints of celery, cilantro and lime. The spring mix salad with lime continues into the body where notes of caramel, hay and yeast intermingle. Finishes slightly astringent and dry.

Thanks to July’s Santa. Pours somewhat cloudy light copper with a small lacing white head. Aroma is of mint, citrus and yeast. Taste is refreshing and smooth, mint, yeast, grains, citrus and a slightly bitter finish. I thought this one was solid.

bottle. it has a murky golden color with a large head. even the smell is carbonated. it has a taste and an aroma of dust and dirt.

Bottle. Hazy amber coloured with a rather small white head. Hmm I guess I’m never gonna learn to really enjoy these saison’s. Always taste infected and like spider webbs and old moldy cloth. And this one is no different. Sorry.

Pours a hazy amber with a small head. Sweet with some bitterness and a hint of acid. Aromas of grain and bread. Also some wood and dust. Meium to full bodied. Lively carboantion. Metallic finsih.

Cloudy yellow with a nice lasting white head & tremendous lacings. Fresh aroma - very fantome like - spicy & fruity with the classic herbal/earthy touch. Slightly sour. Medium bodied. Some hops & yeast were spotted in the end. This was my last Fantome while I was in Belgium. Got pretty drunk drinking all these large bottles by myself:-)

750ml bottle. I am rating based on memory - I lost my notes. I had this instead of a bottle of wine with a great dinner at a place in Atlanta called Floataway Cafe. The beer was cloudy and deep red/amber with hints of brown. The head was was formed of large bubbles and not particularly long lasting. The aroma was fruity with some malts and yeast and a signature Belgian funkiness (brett?). The flavor of the beer was an interesting combination of sweet toffee-like malts, some grassiness and some funkiness, and some fruit. There was a touch of acidity/sourness that provided an interesting counterpoint to the funk. The finish was dry with hints of malts, yeast, and acid. Overall, interesting, but not as good as their standard Saison. Though, judging from the great variety and inconsistency in the ratings for this beer, perhaps it doesn’t travel well and would have been even better if I had found it in better shape.
